Chocolate Mint Candies Cookies
Very, very good! It was hard to tell when they were done because they stay SOOO poofey and soft while in the oven, but as long as I took them out after 10 minutes regardless of what they looked like, they were still nice and chewy. The first batch was crunchy. I also turned my oven down to 325 after the first batch, but I just think my oven is goofy.
I used the Andes baking ships, which are crushed andes mints, and I think it resulted in a prettier product than the whole mints. I used a 10oz bag for the whole batch.
I put half the batch in the freezer for gift trays for Christmas, so lets home a few weeks in the freezer doesn't ruin their flavor and texture.
I'll definitely be making these again, probably in a few weeks!! I might try to find a chocolate cookie recipe that uses cocoa powder though for a more economical cookie since the mints are pricey.
