Eggplant Parmesan II

3 large eggplant was way too much. I used my big deep lasagna pan for this one, and still had 4 layers up to the top. Because of mass amounts of eggplant, I felt like the dish really lacked that saucey, cheesy goodness. I only had 6 cups of sauce on hand, and could have easily used 2 more. I ended up using probably a full cup of parm cheese too. I have to be honest, the recipe as-is was not very good. The concept was ok, but if I were to make this again, I'll be making quite a few changes.

Chicken Pot Pie IX

Outstanding! My husband and I LOVED these. We couldn't get enough. I might add some more herbs to the filling, but other than that, they were amazing. UPDATE: We substituted 3/4 white wine for chicken stock, and added 1/8 tsp rosemary and thyme. The white wine added to the sauce is fantastic!

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

I really liked how easy this recipe was, and that it only took me about 15 min to whip up. I did feel like it was missing something though. I might add some white wine to the tomatoes, artichokes, onions and garlic next time.

Grilled Fish Tacos with Chipotle-Lime Dressing

Two giant thumbs up on this one! My husband was really skeptical of this recipe, but ended up LOVING it. We like to add a bit more chipotle pepper to our sour cream sauce for some serious spice. Yum!

Ghirardelli® Chocolate Dessert Cups

I was skeptical at first with this recipe, but it worked out perfectly for me! I did make one change..after I blew up my ballon to the size I needed I dipped it in cocoa powder thinking the chocolate would peel away from the balloon better. It must have worked because I didn't have any problems seperating the chocolate and balloons. My cups didn't look as pretty as the picture, but they still impressed my family at our reunion!

Salsa Chicken Rice Casserole

My husband and I loved this recipe. I did make a few changes because of what I was lacking in my pantry/fridge. I used only one can of the soup because that's all I had and I'm glad I did, it would have been too much soup with 2 cans. I also added some sour cream and hot sauce to the soup/rice mixture. I think I only ended up using 2 1/2 -3 cups of cheese, and that was enough for us. I topped this with jalapenos and served with tortilla chips. I'll make this again with my changes for sure!

15-Minute Dinner Nachos Supreme

Meh. The dinner was easy to put together and it really did only take 15 minutes, but it was pretty bland. To spice it up a bit, I added a little bit of chili powder and cayenne pepper. I'm honestly not sure if I'll make this again. Maybe if I had kids and needed a quick meal....

Easy Slow Cooker French Dip

This really easy, but it tasted just like pot roast. The dipping au jus (sp?) was a bit bland, but I think that can be doctored up a bit. I also put some swiss cheese on my rolls, it was delicious. Will I make this again? Probably.

These were good except they tasted a lot like a fried egg, and were a tad bland. I might use a more flavorful cheese like smoked gouda next time. Overall, they were good, and with a few small changes, I would make these again.

No Bake Chocolate Oat Bars

These are good, but it seems like all I taste in the oatmeal mixture is butter, and without the full amount of butter, the mixture crumbles too much. I wish there was a way to keep the oatmeal together without so much butter.
