3 large eggplant was way too much. I used my big deep lasagna pan for this one, and still had 4 layers up to the top. Because of mass amounts of eggplant, I felt like the dish really lacked that saucey, cheesy goodness. I only had 6 cups of sauce on hand, and could have easily used 2 more. I ended up using probably a full cup of parm cheese too. I have to be honest, the recipe as-is was not very good. The concept was ok, but if I were to make this again, I'll be making quite a few changes.
