About this Cook
I love eating, yeah that probably sounds terrible but I do. Love reading science fiction fantasy books. Though I have been cooking a long time I would never call myself an expert because I can't walk into a kitchen and start throwing stuff together and have it coming out fantastic, I follow recipes and then add or subtract from them the next time.

My cooking triumphs
First time I actually put something together myself with no recipe. Was trying to figure out what someone else had made and the flavors I thought I had tasted, and what I came out with is a quick easy dish that everyone that has ever had it has asked me for the recipe, and that is such a great feeling.
My cooking tragedies
Making beans and ham hocks and forgot to soak the beans first. I threw them in the crock-pot with the ham hocks and onions and when they where done cooking my husband thought I had thrown in a whole bottle of salt in the pot.

Chocolate Rum Balls I
Well, my folks loved these as well as my friend that I gave some to. Yes, you have to love rum, especial after a few days or so, since the flavor does get stronger. I used a Raspberry flavored rum. I also used someone else's ideas about coating my hands with some powder sugar so the balls wouldn't stick to my hands, and putting the powered sugar in a ziplock bag and placing the rum balls in that to coated them, made it really easy.

Casablanca Chili
The balance of sweet and spicy was great. My husband preferred it to be a little more spicy, said it was too sweet, so I cut back on the mango chutney (only kind in our store was a sweet and spicy mix-so it made the dish a little sweeter and brown sugar some and he enjoyed it better. But try it first the way the recipe calls for it.
