Fried Chicken Tenders

Coating the fingers with breadcrumbs and then frying at 375 degrees resulted in burned breading. I baked the first batch for 7 minutes, the second for 6 minutes, and the third for 5 minutes trying to avoid burning the breading, but every single one was burned. I was trying to make my own chicken fingers to avoid buying the overpriced Schwans tenders, but there is no way that my 2 year old will eat these.

Chocolate Trifle

This is now known among our friends as "The Dessert". Before every party, I'm asked if I'm bringing "The Dessert". It is so good! I use the brownie mixes that have some sort of chunk in them (ie. triple chocolate chunk brownies, chocolate peanut butter cup). I also whip up one cup of heavy whipping cream and add that to the condensed milk/water/pudding mix instead of using cool whip. I think this helps to make sure the sweetness isn't overdone. And for the cool whip layer, I use French Vanilla flavor instead of plain, because it gives the whole dish more flavor. You have GOT to try this, and try it my way because like I said, it's getting quite a cult following!

Rocky Road Ice Cream

This ice cream is FANTASTIC! It was my very first attempt at making homemade ice cream, and I decided to try it because my husband loves rocky road. I followed the recipe exactly, and the end result is so creamy and yummy, it's amazing. I'd say it's on par with anything you can get in the store (think Edy's, Breyers, etc). I bought a package of chopped pecans, and also put in 1/2 cup of mini chocolate chips. I have to say it again, it's SO GOOD, this isn't going to last long in our house!

Chicken and Dumplings III

My boyfriend and I loved this! I followed many of the suggestions and boiled the chicken in 1 can chicken broth, 1/2 cup white wine, water, 2 bay leaves, and 1 tbsp minced onion. I used 1 can each of cream of chicken and cream of celery. I omitted the salt, added 1 1/2 tsp garlic powder and 3/4 tsp pepper to the soup mixture. I used one can of Grands buttermilk biscuits, torn off and flattened before added to soup. It all turned out wonderfully tasty and easy!

Pot Roast in Foil

This is the best pot roast recipe EVER! It tastes just like mom's, and this method is easier! The soup makes a wonderful gravy that is more than enough for the meat and potatoes. At first bite my boyfriend said "Yup, add this to the dinner rotation!" THANKS!!

Hot Bean Dip

Fantastic dip that got lots of compliments! It also performs well using fat-free beans, sour cream, and low-fat cream cheese so that's an added plus! I added an entire pack of the McCormick "hot" taco seasoning, and also spread a jar of medium taco sauce over the top of the cheese before baking to give it more of a kick. I would recommend that you use one and a half cans of beans instead of two so the beans don't overwhelm the cheeses and the seasonings.

Baked Fish with Shrimp

This recipe was very tasty, however I do have some improvements. We used salmon which turned out excellent, and heavy cream instead of milk. The sauce was very rich and the sheer volume of it overwhelmed the shrimp and fish. Also, the 4T of sherry recommended made it way too strong. Next time I'll reduce the sauce ingredients by 1/3 and add only one or two tablespoons of sherry. You could also substitute Old Bay seasoning for the sherry for a different, spicier flavor!

Salsa Chicken

I've made a variation of this recipe for a while now, and it's delicious! I use one jar of salsa and pour a little on the bottom of the pan before I lay the chicken down- since it can simmer in the juices I think it gives it more flavor and tendernes. I also slice some green peppers and onions and spread them over the chicken before I cover it with cheese. Easy, everyday gourmet!

Eggplant Parmesan II

This recipe is great for those looking for health-conscious yet tasty meals! Since it's just myself, I used one eggplant, one jar of sauce (mediterranean style with eggplant and green peppers!), and 1/2 package of reduced-fat mozzarella and found that it was just right. I had enough leftovers to have it again for dinner and also take it for lunch. I'm definitely making this again and again!

American Lasagna

This is a delicious lasagna...even better than mom's! I've added 3/4lb of chopped mushrooms to the sauce, and switched one of the cans of plain tomato paste for one with Italian seasonings, and it makes it even better! This is definitely a keeper!
