Giant Spice Cookies

Very simple, quick recipe. Here's what I did: used a "pudding in the mix" cake mix, chilled the dough for about an hour, rolled the dough in granulated sugar and didn't flatten them as the recipe said. They turned out very chewy/soft, and the granulated sugar gave them an ever-so-slight crispiness. They also have slightly strong molasses and spice taste, so be warned if that's not your thing. With the adjustments I made, it's a five star recipe at my house.

Creamy Macaroni and Cheese

I wish I could give this six stars! Fantastic recipe, and perfect for picky eaters like my kids. I experimented with the cheeses, and tried a colby jack and medium cheddar combo (1/2 # of each). Also omitted the mustard for my children. Since I was low on butter I only used 2 Tb without losing any taste. It was a little heavy for a main course, but it would be an excellent side dish. PERFECT! Will definitely make again!

Apple Crisp II

Great, simple recipe (but of course I had to make some adjustments). I had a lot of red delicious on hand, so I cut the sugar in half and used 1/4 c water like another reviewer suggested. Also, I made more topping -- I increased everything by 1.5 -- and the only thing I will change for next time was to add a teeny bit more salt. Maybe 1/2 tsp. I used real butter and it was well received!

Simple Savory Pork Roast

Fantastic recipe, and easy for a novice meat cooker like myself. I followed the suggestion to insert sliced garlic into the roast and to wrap in foil. I also halved the recipe since I had a 1-1/2 pound roast. Very easy and tasty!

Candied Carrots

I used baby carrots and low-fat margarine without any sacrifice of flavor. I've never been one to enjoy cooked carrots but this recipe changes my mind!

Kid's Favorite Meatballs

Very easy, fun recipe. My preschooler helped to make this and enjoyed helping mommy. I didn't have the chicken & rice soup so I used two cans of tomato soup and omitted the peppers (picky eaters at my house). A huge hit for the whole family!

Chocolate Wave Zucchini Bread

Easy, great recipe. I substituted sweetened applesauce equivalent and decreased the sugar to 1 cup. Bakes very nicely, moist and fun for the kids to spot the "wave".

Spicy Bean Salsa

Hit of the party! I had guests asking me for the recipe immediately and some talking about it days afterward. I used fresh tomatoes from the garden and left out the jalepenos to keep things mild. Also, to keep it lowfat I used Kraft Free Italian dressing (I just dumped a whole 16 oz bottle) and couldn't tell a difference.
