Quinoa and Black Beans

The seasoning is just right. First time eating quinoa...have always been hesitant to cook it but tasted this at a potluck. I made it tonight for dinner and husband liked it too. Only put one can of beans though and will add red pepper next time like someone suggested just for color and nutrition. So easy to make. Great recipe

Banana Crumb Muffins

i would add walnuts. the crumb topping sets it apart. just a little salty. perhaps if i had used unsalted butter it would have been just right. you can easily get 12 muffins out of this. bake for a minute less though.

I had made these a few years ago and lost the recipe. I'm so glad I found it. These are really good but the parchment paper is a must. Dipping in the chocolate makes them deadly.

Cranberry Salad III

I love this salad if you can call it a salad. It's a dessert to me and it is so refreshing and yummy. I put it into a plastic mold and added green food coloring to the cream cheese mixture. It made a nice Christmas presentation.

Peanut Butter Cake II

I botched the cake part because I beat it too long, I didn't read the instructions carefully. But I wanted to comment on the frosting. This was so delicious, I couldn't stop licking the utensils. Some people had trouble with the frosting being too stiff but I added water until I reached a smooth spreadable consistency. You need to add a little at a time and check it because you still want it to hold its shape and not drip. I had made cupcakes and applied the frosting with a plastic fork. It made great swirls without using too much frosting. And the swirls held up and didn't blend together so it was very pretty. I sprinkled a few bits of heath candy on the top for a little crunch because I didn't have the mini choc chips which I thought would have been good. I never thought to make a peanut butter frosting but this was so delish. I tried to bake this cake again since I didn't follow the instructions the first time. I felt like the cake had a good taste but it is too crumbly and dry. I had to have water to wash the cake down my throat. I decided to alter the recipe and came out with a lighter cake by adding a package of vanilla pudding and 1 cup of water instead of 2/3. It was much better to eat but the peanut butter taste is diminished a bit. Will try to use 3/4 cup peanut butter and delete the butter next time.

Two Ingredient Pumpkin Cake

I made this with a carrot cake mix and added the 3 eggs. It turned out really good. But now I know why they said to add some sugar, it can be a little bland. But because I frosted it with a little buttercream frosting, it was perfect. I think another recipe called "3 ingredient pumpkin cake" would be more appropriate. Next time, I might add a little salt and not put on the frosting.

Banana-Oatmeal Bread

This was very good. No measurements were changed but I had to make some substitutions and still it came out very tasty. Used butter instead of vegetable oil. Used soy milk instead of fatfree milk. Used 1 c each unbleached flour and whole wheat flour for the all purpose flour. So it wasn't as low-fat but it was healthy still.

Bermuda Spinach Salad

This is a very good salad, especially with this onion dressing. I didn't have celery seed so I used garlic powder instead and everyone loved it. Next time I might use fresh garlic. I also added a chopped apple and some nuts to the salad...always looking for ways to add fruit and nuts into our diet.

Oatmeal Pancakes II

this really was easy and tasted very good. I even used whole wheat flour instead of white and Splenda instead of sugar and it was still light and delicious. I added dried blueberries so it was not necessary to use syrup or butter.

Grandma's Slow Cooker Vegetarian Chili

Tasted more like baked beans to me but I really liked it. I also added more chili powder as it wasn't spicy enough. But I loved opening all these cans and coming out with a tasty meatless meal.

Cranberry Salad III

I really liked this recipe and others enjoyed it too. I used cranberry jello instead of cherry and I added a few drops of green food coloring to the cream cheese mixture to make it look more Christmasy. The only thing I did wrong was to leave the mold in the hot water too long. Just about 2 seconds was sufficient to loosen it from the mold.

Classic Candied Sweet Potatoes

This is the easiest recipe and the potatoes taste great! All the ingredients are already in the pantry. Because they are still in chunks, the sweetness is not overpowering (I cut them into 2" chunks instead of 1/2" slices)

Farm Macaroons

This is soooo delish I can't stop eating them. And it was very easy to make. It held it's shape and browned so nicely. I could only find sweetened coconut flakes so I used the whole bag, about 3 cups and lessened the sugar to 2/3 cup. I also added about 1/2 cup of small chocolate chips and it is wonderful. I added the chips to the coconut flour mixture and folded in the egg whites. I will definitely make this again. Tastes better than Mounds. Also, I used parchment paper and had not problems taking these off the sheet without grease and flour or spray.

Whole Wheat Pancakes

This is a great pancake, almost better than a regular pancake. Light and tasty, healthy too. I used the oats cuz had no wheat germ and even used powdered milk with vinegar and it still came out tasting great. But I did use 1/2 cup less of the liquid because I like a heartier pancake.

Special Buttercream Frosting

While this recipe is really good, it is definitely not for cakes to decorate in the Wilton fashion. It is too soft to hold up intricate work. Also, because of the cream, refrigeration is necessary. Another reason to not use it on a large elaborate cake, unless you have a lot of room in your frig. But if you just want to frost a cake this is really delicious. I don't usually like to lick frosting, but this one is lickable.

Mini Parmesan Scones

This was really good except for one thing. It was very salty. Well, I confess, I did use Kraft grated Parmesan cheese and I used a little more than 1/2 cup but I also cut down on the salt to one teaspoon. I didn't have self rising flour so I used 3 teaspoons of baking powder. It is delicious, light and fluffy but just 1/2 teaspoon would have been fine for me.

Strawberry Spinach Salad II

This salad was great! It not only tasted great but it looked so pretty! Great for a Christmas dinner. I didn't have dried onions so I thinly sliced some sweet onions and sprinkled the rings in the salad. I also eliminated the poppy seeds and it was fine. The only thing I would change next time is to lessen the amount of sugar by a few tablespoons. The balsamic vinegar is already so sweet. But the sugar makes it thick and clingy so take out too much.

Scones

This was what I was looking for. The most delicious scones. Made it again with 3/4 c whole wheat flour and it still came out delicious and light. Couldn't stop eating them. Can't make them too often because I'm on weight watchers.
