Ranch Bean Dip

Reviewed: Apr. 27, 2006
This was ridiculously easy, and my fiance loved it! I'll be coming back to this one again and again!

Parmesan Puffs

Reviewed: May 1, 2006
This turned out just okay. They were on the bland side, and were completely overshadowed by even a tiny bit of marinara sauce. I think that, I too, will be adding garlic next time!

Baked Spaghetti Corn

Reviewed: May 4, 2006
Quite good, but I will definitely use less butter next time around. It wasn't bad as it was, just a little greasy for my taste. Thanks! :-)

Cherry Crunch

Reviewed: May 11, 2006
This is really good. It closely resembles my mother's recipe for apple crisp, but the cherries added a pleasant tartness that combined well with the topping. Thanks! :-)

Ultimate Cranberry Pudding Cake

Reviewed: May 18, 2006
I meant to review this one before now, and forgot! I made this at Christmas, (without the butter sauce) and it was great. The cranberries are a little too tart for my taste, so I made it with blueberries at Easter and that was great, too! This one is a winner!

This came out perfect, with no changes to the original recipe.

Baked Macaroni and Cheese

Reviewed: May 18, 2006
This recipe has become my favorite version of homemade mac n' cheese. I do, however, cook the noodles until they're al dente, and use less milk. I also stir a few times while it's baking to distribute everything evenly.

Rhubarb Custard Pie V

Reviewed: May 22, 2006
This was okay. The custard was not as creamy as I was expecting. It turned into more of a spongey consistency. I guess I just perfer unadulterated rhubarb!

Graham Cracker Crust I

Reviewed: May 22, 2006
My recipe didn't call for a pre-baked crust, so I baked this with my filling for the time on the pie recipe. It turned HARD AS A ROCK (even with a juicy filling!) Maybe this would be better with unbaked, cream pies.

Black Magic Cake

Reviewed: May 30, 2006
This turned out wonderfully. I used 2 9-inch round pans and frosted with coconut icing. It was light, and a little spongey. No more chocolate cake from mixes for me! :-)

Eggplant and Mushrooms with Wild Rice

Reviewed: May 30, 2006
I love eggplant, but this just didn't do it for me. The consistency was mushy and unappetizing, and it lacked flavor. I don't know what could be done to help it, but this was a waste of ingredients.

Easy Vegetable Pot Pie

Reviewed: May 30, 2006
This was great, however I made a few small changes. I used homemade pie crust, (and by the way, ONE crust will suffice for this recipe). I also used frozen veggies, which I defrosted in the microwave before adding. I omitted the thyme and used dried dill instead. FINALLY, I added 1 egg to the soup mixture. Baked up tasty!

To Die For Fettuccini Alfredo

Reviewed: Jun. 13, 2006
I was in the mood for some dietary indulgence, so I thought I'd give this recipe a shot. It turned out great with no changes to the recipe. The only thing I had a little trouble with is getting all the cheese to melt. But all in all, this is a winner...unfortunately due to the decadence, it will have to be saved for special occasions. Thanks! :-)

Sausage Gravy

Reviewed: Jul. 13, 2006
This was really simple. I used bacon and served over toast. I recommend adding the cooked meat to the gravy. Thanks! :-)

Two-Tone Cheesecake Bars

Reviewed: Jul. 31, 2006
I made these for a family picnic, and they were a hit! I was out of confectioners sugar, so instead of the glaze, I just melted a bag of chocolate chips together with a couple tbs of butter and spread it over the top.

Sophie's Zucchini Bread

Reviewed: Aug. 10, 2006
This had great consistency, and baked up quite nicely. The only change I recommend is to reduce the amount of cinnamon. I love the stuff, but the amount used here was a little overwhelming. Otherwise, top-notch! Thanks!

Irish Tea Cake

Not too bad right out of the oven, but definitely improved the next day. No changes necessary for me. Will keep this one on file!

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Mar. 20, 2007
This was awesome! Used as an appetizer, and no one could stop eating it! I omitted the raspberries and used raspberry jam in the recipe. Also, to save a little time, I purchased tortilla chips, sprayed them with just a LITTLE margarine, sprinkled them with cinnamon sugar, and popped them in the oven for a couple of minutes. Fantastic!!!

Apple Squares

Reviewed: Apr. 1, 2007
Really very good. Sort of like an apple-cinnamon brownie. Two things though...be sure to use a tart apple, such as Granny Smith. It would be a little blah with a milder one. And when it says "cool in pan," it MEANS it. They're very squishy until they're cool. But great...thanks for the recipe. :-)

Chicken Cordon Bleu I

Reviewed: Apr. 1, 2007
I just changed a couple of little things. Instead of pounding the chicken, I just kind of butterflied the breasts, and folded them over the cheese and ham...and then toothpicked them at the seams. I also brushed the breasts with butter before coating them with breadcrumbs. They turned out just the teensiest bit dry, so I think next time I'll cover the pan with foil while baking. I'm told they were excellent, though (I'm a vegetarian). :-)
