Amazing Pecan Coffee Cake

I made this to send to the office with my husband. He came back with rave reviews. They even requested the recipe to publish in the office newsletter. I used approximately half of the topping in the MIDDLE of the cake, and the rest on top. this distributed the flavor through the cake more.

Slow Cooker Chicken and Dumplings

okay, normally i don't like to review recipes that i've messed with, but in this case i will. i confess, i did add a few spices (thyme, onion powder, parsley...) and i used a mixture of chicken broth and milk in place of the water, and omitted the butter. the only other difference is that it only took one tube of biscuits to create enough dumplings. all that having been said, my husband gave this (and i quote) 20 out of 10 for taste. so i guess it's a keeper! thanks for an easy comfort food. :-)

Baked Corn I

Based on previous reviews, I reduced the butter to 1/2 c., and added the liquid in from the can of whole kernel corn to compensate. I baked it in an 8x8 pan, and it came out creamy and rich and yummy. (However, this required me to up the baking time to about an hour) DEFINITELY does not need the full cup of butter. Everybody loved it! :-) Thank you!

Chocolate Chip Banana Muffins

Cucumber Sandwiches III

Myself and a friend made these for a bridal shower. We put together the cream cheese mixture the night before, and then assembled the sandwiches the morning of. They were really good, but a word of warning...don't make too many extra, because they DO NOT hold up as leftovers. Thanks for the recipe! :-)

Peanut Butter Dog Biscuits

My 3 pooches love these...of course, they eat pretty much anything...but I like to think that homemade treats are special for them. :-) Didn't have any flax seed on hand, so I substituted a bit of cornmeal. This does make A LOT of treats, so either be prepared to share with doggie friends, or cut the recipe half. Thanks!! :-)

Savory Crescent Chicken

The fiance scarfed these down, so between that and the fact that they were EASY, this definitely earns 5 stars. However, I will note that it's much easier to shape the bundles if the crescent dough is chilled. I very stupidly left mine on the cookie sheet too close to the preheated oven, so my chicken packets were functional, but uuuuugly. :-) Thanks for a winner!

Baking Powder Drop Biscuits

This worked great in a pinch (for time and ingredients) but I wasn't terribly impressed with the final product. They were somewhat dense, and I was anticipating something fluffier...additionally, they're not terribly attractive on a plate. I guess it's back to rolled biscuits!

Delicious Ham and Potato Soup

No changes, and turned out great. :-) I used a fork to mush up some of the potatoes before adding the roux/milk and that helped thicken as well. Thanks for sharing!

Peanut Butter Pie I

Made this for my peanut-butter-addicted fiance, and I wish I had come across this recipe a long time ago! It was so simple, and looked and tasted really impressive. I used chocolate-filled Oreo's for the crust, and since the Oreo filling was more than sweet enough, I omitted the 1/4 c. sugar. Out of sheer laziness, I used a container of whipped topping instead of whipping heavy cream myself. Heavenly!

Corn Casserole I

I'm sorry to say that this turned out much soupier than I imagined. If I make this again, I will cut back the butter and perhaps nix some of the juice from the corn. It tasted okay, but pooled on the plate. The pasta was fully cooked, so I'm not thinking it was a baking time issue...

Fiesta Cheese Rice

Oh this turned out to be sooooo good! :-) I made it exactly as written, except that I stirred all the cheese into the rice to distribute it, instead of just sprinkling on top. I also used vegetable boullion instead of chicken. It cooked up quickly and with minimal fuss, and was a great, mild (but flavorful!) compliment to our vegetarian enchiladas.

Beefy Cheese Dip

To give this a bit more kick and flavor, I added a packet of taco seasoning, a can of diced green chiles, and a few dashes of Frank's Red Hot sauce. I served as an appetizer before a casual meal with friends, and it was INHALED. :-)

Chicken Potpie

I served this for a family dinner, and got rave reviews. The only change I made was to halve the recipe to only make one pie, and I'm regretting that move at this point, because my fiance is hoarding the tiny bit that was leftover. Kudos for a fantastic recipe!

Oatmeal Carmelitas

These turned out perfectly, with no changes to the recipe (except the omission of the chopped nuts). Sent them to work with my fiance, and he reported back that these little gems got rave reviews. I recommend cutting them into small squares, as they're very rich.
