Best Brownies

Reviewed: Nov. 22, 2008
I was quite surprised about how good these turned out, given the simplicity of the ingredients and the recipe. Boxed brownie mix? Who needs it! I added just a teensy bit of almond extract, and it added a nice flavor. Thanks very much for sharing!

Cream Cheese Squares

Reviewed: Nov. 17, 2008
My husband has declared this a 5-star recipe. I made exactly according to directions, except to cut the whole recipe in half...baked in an 8x8" glass pan. SOOOOO easy. Thanks. :-)

Used a whole 8 oz. package of cream cheese, and the whole can of refried beans. Quick and easy...husband liked it. Thanks! :-)

Best Ever Muffins

Reviewed: Nov. 7, 2008
I replaced the milk with a cup of strong brewed coffee, and added a cup of semi-sweet chocolate chips. Didn't have muffin liners, so I just sprayed the tin with Pam. Divine! :-)

English Royalty Chocolate Chip Scones

Reviewed: Nov. 6, 2008
I give this 4 stars only because of the liquid issue described by other reviewers. I was short on orange juice, so used a total of 8 tbs. milk. This moistened up the dough enough, and they turned out DIVINE. I may try making these with some raspberry jam baked into the middle. Thanks! :-)

Downeast Maine Pumpkin Bread

Reviewed: Oct. 25, 2008
fantabulous! i halved this recipe (which should have made enough for 1.5 loaves, but i dumped it all into one loaf pan.) took longer to bake this way, but turned out great and cinnamony and yummy. :-)

Salisbury Steak

Reviewed: Oct. 23, 2008
this was relatively easy and used common pantry ingredients. my husband scarfed it down and pronounced that this recipe is a "keeper." followed the instructions exactly, except for a reduction in the amount of servings. thank you! :-)

Fried Mozzarella Cheese Sticks

Reviewed: Oct. 23, 2008
i guess i'm just too used to restaurant quality mozzarella sticks...because these were just okay. and frankly, they were too much work to make it worth it. deep frying just isn't my thing. but my husband really liked them, so i suppose it's just a matter of personal opinion!

Creamy Tortellini

Reviewed: Sep. 4, 2008
I made a roux to thicken the sauce before adding the pasta. This was okay...had a little bit of a "packaged" taste because of the soup mix. As with all cream sauces, it gets a bit greasy upon reheating. But not a bad option for when we get bored with tortellini in red sauce.

Creamy Corn Salad

I made this with fresh corn (cut off the cob) and it was great! I could not stop eating it. :-) Incredibly fast and easy, too. Thank you!

Festive Cheese Bites

Reviewed: Jun. 30, 2008
Okay, so I hate to be the downer after all the positive reviews...but I wasn't WOWED by these. They're very rich, and taste okay, but look less than appetizing. And if I'm going to go to the trouble of dirtying multiple bowls to make an appetizer, it had better LOOK GOOD. So if presentation is less than important, by all means, go for it. But these don't look all that elegant!

Hash Brown Casserole II

Reviewed: Jun. 12, 2008
I usually don't bother with a topping on this...and I usually use cream of mushroom soup. This is a fantastic recipe. Ultimate comfort food, and super convenient, since it uses frozen hashbrowns. Thanks! :-)

Home-Style Scalloped Potatoes

Reviewed: Jun. 9, 2008
I've been making this one for quite awhile now...discovered I hadn't reviewed it while sifting through my recipe box. I make them as written, but always add approx. 1 1/2 c. shredded cheddar cheese between the layers of potato. Slice your potatoes fairly thin, or it takes a really long time to bake. But this is a good one! :-)

Funnel Cakes IV

Reviewed: Jun. 9, 2008
The hubby and I were both a little blue yesterday, so we figured this was a perfect indulgent pick-me-up. These turned out perfectly just as written, although I don't think I used ALL of the recommended flour. But pretty close. Thank you for an awesome recipe! :-)

Crispy Gingersnaps

Reviewed: Jun. 2, 2008
Somehow I missed reviewing these up til now! I made them at Christmas time and they turned out great! I was in search of a CRISPY gingersnap with a lot of ginger flavor...not just another soft spice cookie. These were the ticket. I did bake for very slightly longer then recommended...and left them on the cookie sheets for a bit after taking out of the oven. Thanks for the awesome recipe!
