My husband made this, and reported thtat the crust was very crispy, but that it was a little too thick due to the double-dipping process. The crust also got a little too overdone before the meat was fully cooked. Followed the recipe exactly as written, but just turned out okay...not the mind-blowing chicken he was hoping for.

Old-Fashioned Coconut Pie

Apple Bread

Really good! The only change I made was to add a touch more oil, and that was out of necessity because the mix was REALLY dry. DO the toothpick test because it took longer in my oven than expected. Sprinkled a bit of brown sugar on top to give it a crust and it smelled and tasted heavenly.

Black Bean Hummus

Took this to a family function....and got comments about it looking like chocolate mousse, baby food, etc. HOWEVER, the taste is awesome, and we couldn't stop eating it! ;-) Good source of lean protein. Will make again!!

Chili Cheese Dog Pot Pie

I made this out of leftover vegetarian chili. Didn't have any baking mix on hand, so I topped it with refrigerated crescent rolls. The husband claims that it deserves 5 stars. Will try with baking mix next time. Thanks!! :-)

Iced-Spiced Ginger Bars

Warning: I'm reviewing after messing with the recipe! Instead of adding the butter cold and beating everything for 2 minutes, I melted the butter and stirred until combined. These were dense, spicy, cakey, and tasty. Thanks! :-)

Christmas Cranberry Salad

I really liked this concoction...a great way to use fresh cranberries! However, a few comments: There seems to be a large proportion of marshmall ows, which skews the consistency for me. Will use fewer marshmallows and perhaps more nuts? Some diced apple? Or maybe pineapple tidbits instead of crushed? Also, maybe I'm an idiot, but I was kind of shocked by the huge amount that this recipe made. lol. The flavor is spot-on. :-) UPDATE: This was SO GOOD after it sat for a day....can't stop eating it!! Also fantastic frozen. Changing rating from a 4 to a 5!

Strawberry Cinnamon Oatmeal Muffins

EEK! Watch these when in the oven! The only change I made was to se canola instead of olive oil...I put them in the oven at 425 and set the timer for 15 minutes (since I like to give myself leeway with new recipes). At 13 minutes, the bottoms were burnt, and the tops were perfect. *sigh* What a waste of muffins. That having been said, the texture of the tops was good! Will bake at a lower temp next time.

Mexican Rice II

I really wanted this to be PERFECT. And it wasn't bad....it was just ok. Maybe some taco seasoning instead of just cumin? The consistency wasn't quite there either, and I made it exactly as written (except for the use of veggie broth instead of chicken, I don't eat meat.) Like I said, not bad, but I think I'll keep looking.
