Dessertlover's Classic Caramel Sauce

Um, awesomeness? I'm only awarding 4 stars because I had to tweak it a tiny bit. I added the water and sugar to the saucepan and cooked until rich dark golden brown, then added the butter and cream. This did take more than a "pinch" of salt, IMO, but who knows what a real "pinch" is, anyway?? ;-) The consistency is perfect and the flavor is devine. Made to pour over Caramel Macchiato Cheesecake.

Bread Dipping Oil

LOVE! I always have this around, now. I just chuck whatever is left from the meal in the fridge, and pull it out a bit before using the next time around. Awesomeness.

Cheesy Leek and Mustard Soup

Please take this review with a grain of salt, because I did not make it EXACTLY as written. However, I will say that we LOVED it, and it's definitely worth giving it a try. I didn't make huge changes. I basically omitted the onion (I felt as though the leeks were enough of that flavor profile) and added some frozen peas before pureeing. It was fabulous. Thanks!

Monterey Spaghetti

I wanted to like this...and even with the comments about blandness I thought I'd be okay with this recipe because I'm generally sensitive to strong flavors. Well....It was blah even for me. I kind of expected it to be creamier, a bit saucier...but it wasn't. I'm not even sure that tweaking would fix it. Won't make again. :-(

Sweet Corn Cake

This was FANTASTIC! We loved it as a side for enchiladas. Made exactly as written...except I could NOT find masa flour locally, so out of desperation I used 1/2 white flour and half finely ground cornmeal to make up that 1/3 c that the recipe calls for. The water bath is a must to get the right consistency, so don't skip that step.

Creamy Corn Soup

I made this as directed, with one exception...I used an immersion blender to purée it at the end. Served with a selection of "toppings" to choose from....cheddar cheese, green chiles, crumbled bacon, hot sauce...it was really good with these additions. It's an excellent base but a bit blah when eaten plain.

Beefy Pasta Skillet

My husband made this...he chose it based on the ease of preparation. It was indeed easy to make, but lacking in oomph. He reports that the tomato soup is the dominant flavor. It needed more cheese, and more seasoning. Will not make it into our dinner rotation.

Exactly what I needed to fill my cake. Not too runny, not too stiff. I was worried while it was cooking, because it looked like it was getting lumpy, but I kept whisking and it smoothed right out.

Cream Cake

Not. Good. At all. I am an experienced baker, and followed the directions to the letter...except to reduce the salt a bit. It had NO FLAVOR, unless you count salty, since apparently even 3/4 tsp is too much. So it ended up with just a blah, mildly savory quality. I did use good quality ingredients, but that wasn't enough to overcome whatever is wrong with this recipe. I give it minor points for frosting nicely, but that's about it. Sorry!
