Chantal's New York Cheesecake

This is the most tasty addictive cheesecake I have ever made and eaten! And it's so incredibly easy to make. I will be making often. I used almond extract instead of vanilla but only half the amount of almond extract as it is quite strong. Next time I will melt some dark chocolate and drizzle it over the top when it is first baked. I made it to take as a dessert when travelling to my Aunt and Uncle's house for a vacation, and they wanted the recipe too. You simply must make it - you will be hooked!

Fresh Ginger Cookies

Excellent ginger cookies, just like my Mom used to make when I was small . . . lots of good memories!! I used half molasses and half honey and I love them this way! This recipe is a keeper!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

WONDERFUL muffin recipe!! This is a keeper! I used frozen strawberries and mashed them up and drained off most of the liquid. I was a little scared to use frozen mashed strawberries in case the muffins came out too soggy but they were perfect! I also found Whole Grain flour in my supermarket and this made the muffins very healthy! This recipe is a keeper!

Banana Cranberry Muffins

These muffins took longer to prepare than most muffin recipes but WELL WORTH IT!!! I cut the fat in half by replacing apple sauce for half of the shortening and used butter instead of shortening. And to boost the fibre I used half white flour and half whole wheat, plus I subsituted 1/4 cup of white flour with ground flax. I put in the zest of an orange and a healthy dash of vanilla. These were by far the most flavourful muffins I have ever made - this is definetly a keeper. I had hoped that the juice from draining the cranberries would be drinkable but it was way to sweet. Oh by the way a package of cranberries = 3 cups. Now that Thanksgiving has finished here in Canada the cranberries are on sale, I'm going to buy a few packages and put them in my freezer for future use!

Cinnamon Oatmeal Cookies

EXCELLENT Cookies! My 10 year old daughter said they were the VERY best! I rolled them into small balls before putting them on the pan and they came out perfectly shaped, crinkly on the top, crunchy on the outside and slightly chewy on the inside - Perfecto! Next time, and there will be many next times, I will add a touch of orange rind to jazz it up just a wee bit!

Homemade Fresh Pumpkin Pie

Excellent recipe and so easy to make with ingrediants I have on hand. I grow Cinderella pumpkins, peel and steam them, mash them and freeze them in bags. The only thing I have found is that I need to put the thawed pumpkin through the blender before mixing it, as it comes out from the freezer bags stringy. When first out of the freezer I put the frozen pumpkin in a strainer on top of some cheese cloth and let some of the water strain out. Then I put the thawed pumpkin through the blender before mixing it. AWESOME recipe - so moist and yummy!!! This is a keeper!

Addictive Pumpkin Muffins

This is the most awesome pumpkin muffin recipe!! I did find it a bit dry so I added more applesauce and yes 2 more eggs plus a cup of shredded apple with the skin on and used whole wheat flour. It's moist and tender without being the least bit soggy and they are heavenly!! I will make this again and again!

Pumpkin Cake I

This recipe was really good. As others did, I used half apple sauce and half oil. But if I were to make it again I would cut down on the spices, there were too much and it took away from the pumpkin flavour, would also consider adding some crushed pineapple. I used freshly cooked cinderella pumpkin. Wish I knew how to make the texture not quite so dense? - anyone with ideas? I made a double batch and took one to work, with a cream cheese icing, it was a big hit! VERY EASY and quick to make. I will keep this and make it again.

St. Patrick's Day Zucchini-Oatmeal Cookies

Make sure you bake the cookies well - till they're quite brown on top or they taste doughy. While the kids liked them, I found them bland and perhaps adding some salt or additional vanilla or maybe some orange zest would help. I used half white flour and half whole wheat flour and added 1/4 cup of wheat germ to make them healthier, also halfed the chocolate chips and there was plenty to make the kids happy. Would make them again with the above changes.
