Cheesy Beans and Rice

Pretty good. I added stir-fried chicken and minced garlic, and since I didn't have diced tomatoes and chilies on hand I added a little salsa in its place. Other than that, I did everything the recipe said to do. Nice, tasty, healthy recipe.

Cauliflower Casserole

I made this recipe the same way as VICSGARDEN did (I'll copy/paste his review). The only thing I changed about the recipe is that I mixed the bread crumbs and other seasonings together before sprinkling onto the cauliflower. From VICSGARDEN: I gave this 4 stars because I didn't change the ingredients. It's a good combination. I knew I'd end up with a goopy mess by mixing bread crumbs and parmesan cheese with melted butter so here's how I made it: I steamed the cauliflower instead of boiling it. Added the red pepper flakes to the melted butter and poured it over the cauliflower then lightly sprinkled cauliflower with bread crumbs (about an 1/8 cup) then sprinkled on 1/4 cup parmesan cheese and topped it off with 1 cup of extra sharp cheddar and baked as directed.

Amy's Spicy Beans and Rice

I used black pepper, garlic powder, onion powder, Adobo, cumin, and hot sauce. I added shredded cheddar cheese as directed. I don't have jalapeno peppers on hand, I hate olives, and I was too lazy to cut up onions. I forgot to add salt, but it tasted decent to me. I ate it with coconut jasmine rice.

Green Beans with Bread Crumbs

It's allright. I'm not used to eating bread crumbs in that manner, but it definitely makes the appeal of eating green beans much better for me. I'll use a little more seasoning next time, and maybe I'll pop it in the oven like another person did.

Spinach and Potato Frittata

Eating this right now. It's pretty good. I had to make a couple changes to the recipe, though. I used 2 regular Idaho potatoes and cut them up in pieces; I don't have red potatoes on hand. I also had to use canned milk because I ran out of regular and soy milk. I also had to use mozzarella cheese because that's all I have for now. I also used red onion because I didn't have green onions. I had to allow the whole mixture to cook a little longer because at the end of 7 minutes the eggs weren't fully cooked. It browned the bottom of the frittata some but it's still good. (Can't eat not-fully-cooked eggs now, not healthy.) Overall though, tastes good. :)

Best Black Beans

I liked this. I ate it with the Asian Coconut Rice recipe and a piece of salmon. (Asian and Spanish food, interesting combination.) I think it needed a little more flavor, so next time I make them I'll add a little more salt and possibly a little more garlic.

Chicken Salad with Couscous

This is delicious. The only thing I modified was the amount of chicken I used - I only used 2 pieces. I also added 2 cloves minced garlic and feta cheese to the couscous, and I hate olives so I didn't use any. I recommend checking your chicken to make sure that it's fully cooked; I did so by making a slit in the middle of each, which signaled to me that I needed to simmer it a little longer.

Asian Coconut Rice

Pretty good. Mine wasn't as flavorful as I wanted it to be, but it's more than likely because I used light coconut milk, but I still liked it. So I definitely recommend using regular coconut milk in the future. My jasmine rice was from Thailand.

Lemon-Pepper Salmon II

Pretty good. Nice and very easy to make. I marinated it with store-bought marinade for a couple days and used salmon filet instead of salmon steak, but other than that I made it exactly the way the recipe called for. Nice with steamed vegetables. The only thing I'd change is the cooking time. It wasn't cold, but it wasn't hot either, so I put in back in the oven and baked it some more (on top of initially broiling it).

Sesame Tilapia

Delicious, quick and easy. I made it exactly as the recipe states except for one thing - I marinated the tilapia overnight with (liquid) marinade, then I used the marinade listed in the recipe and put it in the fridge for 1/2 hour as stated. Made some couscous as a side dish. I'd definitely make this again.

Green Curry Tofu

The only things I did differently with this recipe was use already-made store-bought Thai yellow curry sauce (instead of making my own green curry sauce), which already had coconut milk as its base and is (of course) yellow, and I used brown jasmine rice instead of basmati rice. It was okay, but if I make it again it won't be for a long time. I think 3 stars is the best rating to give for this recipe. If I try it again with green curry, I'll see if it tastes any better. But for now, 3 stars.

Feta Chicken

Pretty good, eating it right now. I marinated my chicken for a couple days (didn't have time to make this earlier) and I used feta cheese with Mediterranean herbs instead of with tomato/basil. Other than that, I made the chicken exactly as it was outlined. Mine didn't come out looking like the feature picture, but the chicken DID fold in half. Nice, simple recipe. I think next time, I'll dip the chicken in egg, then in the bread crumbs. I'd also recommend cooking it for a little longer than 30 minutes, as mine wasn't fully cooked (but that could be for a number of reasons). Healthy with a side of pasta and broccoli.

Broiled Tilapia Parmesan

Great. It can be made very quickly. Didn't have any celery salt so I just threw in a sprinkle of kosher salt. I'll pick up some celery salt and try it next time. Also sprinkled some bread crumbs on top of the mexture. Tastes good.

Incredibly Cheesy Turkey Meatloaf

I like it, just made some. I cut the recipe in 1/2 though, so I only used 1 lb. ground turkey and less milk. I also added a little red onion chopped into pieces. I also mixed in the ketchup (accident) and put some on the top. My cheese was shredded cheddar. Tastes different than meatloafs I've made in the past, but it's still good. I'll eat with brown rice and organic spinach.
