Authentic Mexican Tortillas

Reviewed: Apr. 10, 2008
If you are trying to make tortillas in a large batch to reheat through out the week do not cook them all the way through, just leave them on the heat breifly enough to warm them and put them in a plastic storage bag. Cool completely before putting them in the refridgerator if you are going to keep them more than a few days. When you are ready to eat them cook them the rest of the way in a heated ungreased pan until they bubble or fluff up, though not all tortillas fluff up like they should. You should also follow all the advice from the reviews about the shorteing and butter and VERY hot water. Thank you for sharing this recipe. Tortillas II is very good.

Spaghetti Sauce Mix

Reviewed: Sep. 23, 2009
Just like the store bought mix, a real lifesaver when I noticed too late that I only had tomatoe sauce on hand. Tangy, not sweet, not too spicy.

Authentic Chinese Egg Rolls (from a Chinese person)

Reviewed: Sep. 12, 2008
These were great, thank you for this recipe. I used ground meat instead of pork and left out the mushroom because I only had ground meat and no mushrooms. However, if you do not follow the recipe and it comes out bad do not blame the recipe. If you want baked egg rolls look for baked egg rolls recipe, egg rolls are fried. If you don't fry the wrapper its not going to taste good. Fry in hot(not warm) oil to fry or your egg roll will be greasy.

Japanese-Style Deep Fried Chicken

Reviewed: Apr. 6, 2008
This reminded me of when I was a little girl a chinese place in the mall sold little chicken drumsticks that tasted just like this, a couple owed the resturant and it closed after the husband murdered his wife. I didn't think the batter was going to cover but it cooked up very nicely. It was not as crispy as I would have liked it but I used a very hot deep fryer, maybe next time I will pan fry them to be crispy. Very tasty, my children ate them up.

Cream Cheese Frosting I

Reviewed: Oct. 20, 2009
So much better than I anticipated not too sweet and not too cheesy or tangy. I did follow the advice of Adagio and Karen Buzzi and it was perrrfect. I colored it pink and frosted a strawberry cake with it and was able to make a perfectly smooth cake after it made its "crust".

Downeast Maine Pumpkin Bread

Reviewed: Sep. 25, 2008
WOW. That is really comparable to the Whole Foods Bakery pumpkin bread, it just needs the walnuts on top and that would be it. I only had one loaf pan so I made one loaf and poured the rest into a very large cake pan, that the dough sat as the same height as the loaf and baked them together and they came out perfect. I followed the recipe, made no alterations. When I first tasted after it cooled it tasted a bit sweet but the next day it had a perfect texture and taste. It would have been excellent with toasted walnuts to balance the sweetness. It was gone in days.

Chewy Peanut Butter Chocolate Chip Cookies

Reviewed: Oct. 4, 2005
I woke up in the middle of the night and wanted a chewy pb cookie that could rip my teeth out or at least crispy chewy and this IS NOT it. A fat puffy cookie that encases the chocolate chips as if its rejecting them. I tried smashing them down and baking them longer, fail, I smashing them down as they rose baking, fail, I tried cooking them at 325 degrees and made them smaller and got close but was already sick from eating parts of the rejects. This cookie needs: to melt the peanut butter and butter together, only 1 tsp. of baking soda, no more than 2 c. flour and MOST IMPORTANTLY needs to be cooked at 325 degrees for 15-18 mins and cooled on pan for 5 mins. The dough should be sticky, patted down, it should spread flat, puff a little when baking and collapse when cooling. That goes for most any chewy cookie but I went against my better judgement and now I have a stomach ache and no more brown sugar or pb to make good batch. O the agony!

Amazing! I didn't alter the recipe but had add a little more broth to cover the potatoes, didn't have any celery so I had to substitute w/celery salt and used cheddar since I didn't have Swiss cheese but the recipe is still phenomenal! Perfection and room to play!

Aunt Cora's World's Greatest Cookies

Reviewed: Sep. 21, 2009
These did not turn out chewy for me. Dry and sandy, better than fluffy and cakey but not chewy like everyone eles says. It was delicious cookie dough and made pretty cookies but they turn to sand in my mouth. I wish I could find pb cookie so chewy it almost pulls your teeth out chewy, you have to rip it chewy. I wasn't expecting that from this but this is not chewy at all.
