Coconut Cream Pound Cake
Wonderful texture and flavor. I made it in two layers and they baked in 40 minutes in my convection oven. I want to use this for a tiered layer cake for my parents' 50th wedding anniversary in a few months and I may do another trial reducing the flour slightly and/or removing the yolks from a couple of the eggs, just to make it a smidgen fluffier. Perfect with coconut cream cheese icing, as others have suggested.

Mustard Sauce for Ham
This was perfect with our Easter ham yesterday! Just a note: this can be easily done in the microwave. Whisk the milk and egg yolks together in a microwave safe bowl (I used a Pyrex measuring cup) then stir in the other ingredients. Nuke for 2 minutes and you're done. Great consistency and a nice tangy flavor. Like others, I used cider vinegar and added some tarragon. I also used 1/2 prepared Dijon mustard and 1/2 of the mustard powder/vinegar solution. Lastly, I used maple syrup instead of sugar. Will keep this one on file!

Apple Cake IV
Lovely and easy-to-make cake! Like some others suggested, I held back on the oil a bit (used a scant 3/4 cup) and the cake didn't seem to suffer. I was also generous with the cinnamon and even added some allspice and ground ginger to give it more of a spice cake taste. Delicious - would definitely make again!
