Taco Casserole

I did season the ground beef with salt and pepper. I also used Ro-tel instead of the diced tomatoes. The can is smaller, so I added some salsa. I also added corn and drained and rinsed black beans. I always add lime juice, lime zest, sea salt, chopped cilantro and cumin to sour cream to make a sour cream dressing, so this was excellent on top of the servings! My 15 year old loves this! I did top with Mexiblend cheese, baked and then topped with the crushed tortillas and a little bit more cheese and baked about 8 minutes. will make it again soon!

Mini Pumpkin Whoopie Pies

I didn't check my pantry very well and only had 3/4 cup reg. sugar, so I added brown sugar to total the amt. cld. for. I also used about 2 tsp. pumpkin pie spice instead of the cinnamon and ground ginger. I used a whole can of pumpkin..the regular size, like the soup can size. For the filling I used 8 oz. cream cheese, 1/2 stick butter and about 1 1/4 cup powdered sugar along with the 1 tsp of vanilla. I had trouble finding the correct scoop size, so the ones that were too big, I simply iced with the filling! I will be making these for a Halloween party next weekend, and for Thanksgiving, and for....well..you catch my drift!

American-Italian Pasta Salad

To die for...ok..maybe not to die for...but this is really good!! I have made it several times and use different pasta each time. I use a whole bag of petite peas. I don't add onion, due to a 14 year old....I add pepperoni, hard salami, fontina, cheddar, cherry tomatoes, you name it...you can add it...I have made it with and without the fresh parsley. No difference to my family. I like to use the zesty Italian dry mix if I can get it at the store. This is a true keeper!!!

Chewy Chocolate Chip Oatmeal Cookies

As with any recipe her, I always read the reviews first. I increased the flour to 1 1/2 cups, increased the baking soda to 1 tsp., decreased the salt to 1/2 tsp. since I used salted butter and decreased the vanilla to 1 tsp. I ALWAYS bake a small batch of cookies when I am making a recipe for the first time. I am glad I did. I baked 6 cookies and let them cool. I went back to the mix and added a pinch more salt, and about 1/2 tsp. of cinnamon. Due to family preference, I did not add any nuts. I just tried one this morning with my coffee, the before and after cookie. I must say the after cookie has much more flavor. Texture of the cookie is great the next day. Will probably make these again with my modifications.

Asparagus, Feta and Couscous Salad

I used the roasted garlic flavored couscous and I cooked it in chicken broth. I roasted the asparagus and tomatoes. I added chopped green onion and I did salt the veggies when I roasted them. ...and I added some salt after I mixed everything together. Very good!! I think the next time I will either add or serve with grilled or roasted shrimp.

Cowboy Mashed Potatoes

WOW! Very good! I only had yukon golds and I used a can of the big green guy's chipotle white shoe peg corn instead of the frozen. I did add a "dollop" of sour cream to as I do with any mashed potatoes. Steve, this is a great recipe. Thanks for sharing!!!!

Spanish Rice II

I did not add the bell pepper..13 year old's request. I did add about 1 tsp. of ground cumin. I used the diced tomatoes and green chilies with lime and cilantro and added a couple of squeezes of fresh lime juice after I placed it in the serving bowl. Top with a few sprigs of cilantro. Excellent! I did use basmati rice for the white rice. Thanks, John Mac for this delicious recipe!

Banana Bread VII

My 11 year old wanted banana bread and we found this recipe and he made it! He did use 1/2 brown sugar and 1/2 white sugar and he did not use any nuts...he has braces and can't eat nuts right now. He said it was delicious! I do not eat banana bread, so I am going by an 11 year old's taste buds. He said for us to be sure and buy extra bananas next time so he can make this again!

Surprise Tuna Salad

I used 2-7.5 oz packs of albacore tuna. I toasted the pecans and I added parsley because I thought the recipe called for it! I did not measure the ingredients, but I know that I used more than the recipe called for. I served on wheatberry bread, topped with sliced tomatoes freshly picked from our vine and added crispy fried bacon on hubby's sandwich. The tuna is even more delicious the next day! My son, who is 11 and does not like tuna salad, loved this!

Pizza Salad II

I used fresh mushrooms, added salami, used way more pepperoni, cubed the mozzerella and added cubed monterey jack cheese. Used a flavored Italian dressing instead of just the plain or zesty. Took this to a teacher's luncheon...the first thing to go and the most requested recipe! When you take the lid off, it smells just like pizza! Thanks for sharing the recipe!

Italian Sausage Mushrooms

I used an 8 oz. cream cheese that I seasoned with minced garlic, oregano, thyme and pepper. I did not have enough mushrooms, so I did as another suggested and placed it in an oven proof bowl and heated it in a 350° oven along with the 'shrooms. I also topped the 'shrooms and the extra filling with shredded parmesan before baking. WONDERFUL!! Will make again and again and again and...well..you get the picture!

Watermelon Fire and Ice Salsa

Wonderful! I did not use any bell pepper...family preference. I did add fresh garlic and more green onion and lime juice and zest than called for. You do have to drain before serving. My 10 year old loved this with grilled swordfish. I served with regular tortillas and the hint of lime and everyone liked them equally. Thanks for the recipe!

Southwestern Pasta Salad

Wonderful! It was unusually hot here today, so I made this and served with grilled talapia. I did add chipotle chili powder (1 tsp) and more lime juice. I used the canned mexican corn since I cannot get my 10 y.o. son to eat bell peppers..pretty sneaky huh?! I did add cubed Monterey Jack Salsa cheese. I can't tell you if it is good the next day since all of it is gone! Thanks again for a wonderful recipe!

Monterey Jack Salsa

Debra, this is wonderful! I used more cheese and added chipotle chili pepper powder for a little kick. I mixed the dressing with the avocado right away and did not have problems with it turning. I made the evening before, refrigerated it, and set it out about 30 minutes before serving. Everyone hocered over it until it was gone. It really isn't THAT ugly of a salsa...

Mexican Cream Cheese Rollups

I used 16 oz. cream cheese, less than 1/3 cup may, omitted the green olives and added chipotle chili powder. I spead on tortilla, added a slice of smoked turkey from Publix deli and rolled. WONDERFUL!!!

Italian Sausage Dip

I used 2 lbs. of sausage..one hot the other mild. I also used a whole container of chopped tomatoes that you get in the produce dept. about 1/2 container of chopped onion and 1/2 of bell pepper..to save time! I only used 1 can of the chile peppers. When the veggies were tender, I added some fontina (Italian) and munster cheese. Delish! I served with the garlic bagel chips and Scoops! It was the hit at our Italian appetizer night!

Cream Cheese Tart Shells

Wonderful! I baked the tart shells for about 15 minutes..your oven will vary..and cooled. Once they were cooled, I filled each one with homeade chicken salad and served at a Bridal Luncheon. The bride now wants these added to her wedding reception. Thanks Glenda for such an easy and versatile recipe!

Macaroni and Cheese Salad

I made this for our neighborhood 4th of July party. I had to make a large amount so I simply adjusted the measurements accordingly...in other words I "eyeballed" alot of ingredients! I used frozen peas which I just simply thawed instead of bell pepper as suggested. This salad was the first to go! Everyone raved about it. Thanks Sally for a great and simple recipe. The cider vinegar and beau monde seasoning are the hidden secrets to this great salad!
