Crispy Edamame

Reviewed: Jul. 4, 2014
I think this needs a new name. It give the impression that the edamame itself should be crisp but looking at the directions it seems the cheese is only the crisp part. And after baking for 25 min I realized this. I stirred every 5 minutes. I ate these as a snack, grabbing each bean like popcorn. It could easily be cooked a little less as used as a side dish as well. I like this recipe. Will make again, maybe with other veggies too.

Taco Pie

Reviewed: Jun. 27, 2014
The directions kind of puzzled me on this one. It said lay rolls flat on the bottom of a SQAURE pan but they didn't fit evenly. I cut it to fit with a little up on all four sides. But didn't spread because it didn't say that. Did blend edges together though. Baked until golden brown and it came out rather puffy. Accidently bought "cheesy" taco seasoning, but figured it would be ok. Mixed half the cream cheese into the beef as well since there was so much! by the time I got to adding the crushed chips there was hardly any room left in pan and did less than the directions called for. Just enough to cover. And crushed pretty well. Baked whole thing for 10 min and it came out smelling great-like toasted chips. Looking at the recipe this is only four servings and it is a TON! This is basically nachos. With the amount of cheese and cream cheese, this was very rich! I added chopped tomatoes and that seemed to be better. I think it definitely needs some balancing out with tomatoes, lettuce, and avocado. The refried beans would be a good adjustment too. Like a 7 layer salad. Next day: I could not stop eating this as leftovers-no additional ingredients! It was much better than yesterday! I will make this again!

Too Much Chocolate Cake

Reviewed: Jun. 25, 2014
I just made this-according to directions- even though the 2c chocolate chips seemed like too much and I could find a 15.25oz box of cake. This was so unbelievably easy! With the amount of oil it did not stick to the bowl and poured very easily into the pam-sprayed bunt pan. Baked about 45 min. Couple hours later it slipped easily out of the pan onto a plate and I dusted with powdered sugar. Looked great! A+ for ease! I brought this into work and I think everyone had a slice. People said it was good, but no one really raved about it, or asked for the recipe, like they do when they love it. I personally thought it was too rich. I won’t make again. I would rather have just a lighter plain devil’s food cake.

Quick and Easy Chicken Noodle Soup

Reviewed: Jun. 23, 2014
Yesterday when I made this for dinner I gave it 2 stars . I made it by cooking just 1 breast in the broth, shredding the chicken, and then adding everything until it was soft. Seemed logical. But it came out rather bland. Maybe I've been spoiled by my mom's soup. But this one didn't do it for me. I said I would not make again. Now, the next day I am kicking this up to 3 stars and saying I will make again with the understanding that this is BASE soup. Next time I will use moister rotisserie chicken meat, brand name Swanson broth instead of generic, and add more spices and salt. I can only give this 3 stars as I don’t think the recipe is good enough “as is”.

Strawberry Spinach Salad I

Reviewed: Jun. 18, 2014
I made this according to directions but admittedly forgot the almonds. The dressing was way too sweet for me. And I actually didn't care for the strawberries in it. But I will make again with almonds and adjust my review accordingly. ===== Update: I did not even want to make the rest of this salad. just too sweet. Rating downgraded to 1 star.

Broccoli with Garlic Butter and Cashews

Reviewed: Jun. 17, 2014
Made according to ingredients, just microwaved the broccoli instead of boiling. This is a keeper. So simple and so good. I ate it like candy. The only thing that would decrease this rating would be the that the butter and soy make it less healthy, but I'm giving it 5 stars anyway since I will make it again.

Caramelized Baked Chicken

Reviewed: Jun. 15, 2014
This was good, as all chicken wings are, but not great. I made scaled the recipe down to 2lbs of chicken wings, but otherwise made it according to directions. It never did caramelize for me or turn thick. It had a good flavor very similar to teriyaki actually so am thinking I could just skip some steps and buy teriyaki marinade.

Broccoli Cheese Soup

Reviewed: Jun. 9, 2014
I made this for friends coming over and they and I loved it. Made according to directions. Exactly like a restaurant soup which is what I was aiming for. I think the trick is the Velveeta which makes it blend better than real cheese.

Chicken Enchiladas II

Reviewed: Jun. 8, 2014
I made as directed. Which is why I can rate this recipe because I didn't change it. This recipe was disappointing. This was very rich and in my opinion not worth the massive amount of calories. And I normally love rich foods. I will eat all of it, but not make again. Don't know what would have made it better so won't even be adjusting the recipe. ---- Now that it is the next day I am downgrading this to one star. I was trying to talk myself into eating the leftovers and felt sick at the thought. Not a good sign. I threw the leftovers away - and I normally love leftovers.

Pan-Fried Asparagus

Reviewed: May 27, 2014
I have played around making asparagus several ways. This WINS. This will be how I make asparagus from now on. Made according to directions except with my thin spears it did not take but 5 min to cook. I also just eyed the ingredient amounts- does not have to be perfect.

Slow Cooker Chicken and Dumplings

Reviewed: May 4, 2014
Unlike other reviewers, I did not use broth instead of water(1 can) since I didn't want the extra salt. I shredded the chicken at the 4 hour point. I added a sprinkling of mixed veggies so I wouldn't feel so guilty nutrition wise. I did do a sprinkle of flour since it seemed thin, but after dishing up, don't think that step may have been necessary. I added one 16 oz can generic biscuits 1.5 hours before dishing up and they were cooked through. Recipe is good as is, but next time I may add a couple things and make it more similar to its relatives- chicken pot pie, or chicken noodle soup. Needs... celery? Carrots? Thyme? Oregano? Bay leaf?

Mom's Zucchini Bread

Reviewed: May 2, 2014
Good basic recipe. I like it but it was a litte raw in the center. Felt like cooking more would have burned the edges though. Problem with my oven? Not sure. But my friend really liked the bread anyway.

Mini Frittatas with Quinoa

Reviewed: Apr. 18, 2014
I loved the idea of these with quinoa and zucchini, but in the end was not a fan. They lacked flavor and I really don't know how I would make them better. I did not finish the batch I made so only give this one star.

Playgroup Granola Bars

Reviewed: Apr. 18, 2014
I made these according to directions, just substituted cranberries for raisins. I had a difficult time spreading it out enough for the pan suggested. There were gaps and it was not even. The more I tried to fix it the more I messed it up. Did I need more flour? Admittedly I did over bake these a bit. The edges were burned and the middle were still chewy. I do give this 2 stars for taste alone which was good. IF I make these again I will have to adjust temp and leave cranberries/raisins out.

World's Best Lasagna

Reviewed: Apr. 13, 2014
Wow. Just...wow. I've been eating this all week and it gets better and better as the flavor melds. I made it for the first time according to directions and it came out great. The only thing I would try next time is to add more garlic, and fresh basil. My boyfriend gave this a thumbs up as well. It made 8 big servings. No bread necessary, nice and thick. Sauce is a great base-I have a couple cups of the sauce leftover and put it in the freezer for spaghetti. Oh also, I did make 3 layers instead of 2 since I didn't want the noodles to get stuck together as one big noodle, and think that was a smart call. This recipe is very versatile and would work with any pasta really.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Apr. 3, 2014
Wasn't a big fan of this one. Maybe I simply wasn't in the mood. Looked good. Smelled good but didn't do it for me. Made a ton. You definitely need to love meat for this one. Still think it might be good for quesadillas but will not be making again.

Garlic Aioli

Reviewed: Apr. 3, 2014
I can't believe I never tried something like this before. So easy and so good. I made by eye not measuring. Refrigerated about 45 min while I cooked artichokes. Perfect for dipping, don't think I'll go back to regular mayo again. Also dipped tomato in it like a salad dressing and was very good as well. Will make again! Can't wait to try on sandwiches.

Candied Garlic Chicken Wings

Reviewed: Feb. 2, 2014
I made exactly according to directions. I think it’s unfair to not follow the directions and instructions then rate it. These were ok. I was surprised these were not tastier. They looked great but didn’t seem to have much flavor as some others have said as well. I do think the cook time is too long for these. They would have been better had I cut 10 or even 20 minutes from the cook time. They were not falling off the bone juicy, dispite cooking in the juices. Maybe the rack portion of the cook time hurt them. I will eat all of them, but will not make again. I prefer my own go-to recipe of ½ cup orange marmalade + 2 tablespoons chili powder.

Mouth-Watering Stuffed Mushrooms

Reviewed: Jan. 11, 2014
These must have been delicious because I ate them all. Easy recipe and yummy. Made so much filling that I actually had some leftover and grabbed more mushrooms so I could fill them too. Spice gives it a it nice little bite, and who can complain about cream cheese? Yum.
