Crispy Edamame
I think this needs a new name. It give the impression that the edamame itself should be crisp but looking at the directions it seems the cheese is only the crisp part. And after baking for 25 min I realized this. I stirred every 5 minutes. I ate these as a snack, grabbing each bean like popcorn. It could easily be cooked a little less as used as a side dish as well. I like this recipe. Will make again, maybe with other veggies too.

Taco Pie
The directions kind of puzzled me on this one. It said lay rolls flat on the bottom of a SQAURE pan but they didn't fit evenly. I cut it to fit with a little up on all four sides. But didn't spread because it didn't say that. Did blend edges together though. Baked until golden brown and it came out rather puffy. Accidently bought "cheesy" taco seasoning, but figured it would be ok. Mixed half the cream cheese into the beef as well since there was so much! by the time I got to adding the crushed chips there was hardly any room left in pan and did less than the directions called for. Just enough to cover. And crushed pretty well. Baked whole thing for 10 min and it came out smelling great-like toasted chips. Looking at the recipe this is only four servings and it is a TON! This is basically nachos. With the amount of cheese and cream cheese, this was very rich! I added chopped tomatoes and that seemed to be better. I think it definitely needs some balancing out with tomatoes, lettuce, and avocado. The refried beans would be a good adjustment too. Like a 7 layer salad. Next day: I could not stop eating this as leftovers-no additional ingredients! It was much better than yesterday! I will make this again!

Too Much Chocolate Cake
I just made this-according to directions- even though the 2c chocolate chips seemed like too much and I could find a 15.25oz box of cake. This was so unbelievably easy! With the amount of oil it did not stick to the bowl and poured very easily into the pam-sprayed bunt pan. Baked about 45 min. Couple hours later it slipped easily out of the pan onto a plate and I dusted with powdered sugar. Looked great! A+ for ease! I brought this into work and I think everyone had a slice. People said it was good, but no one really raved about it, or asked for the recipe, like they do when they love it. I personally thought it was too rich. I won’t make again. I would rather have just a lighter plain devil’s food cake.
