No Bake Peanut Butter Pie

Very good! I don't eat Cool Whip so I whipped a pint of heavy whipping cream instead. Rich and delicious! I think the plain whipped cream added a richness without it being too sweet which made it really nice.

Chicken Andouille Gumbo

Best gumbo we ever had. Thank you for a nice hearty filling dinner! Will be adding this recipe to the rotation. Only changes I made was I don't care for the taste of boiled chicken so I pan-fried chicken quarters in some bacon grease. I them used the combined bacon grease and rendered chicken fat to make the roux, which also helped me reclaim the browned bits. I did add about a half pound of shrimp and so I've saved the bones and shells from the shrimp to make stock for the next time I make gumbo.

Focaccia Bread

This bread turned out awesome. I used it to make BLTA sandwiches for dinner and so I formed a longer and more oblong loaf. It rose up just right for a nice hearty sandwich. This will definitely be my quick go-to side bread and sandwich bread recipe.

Instant Yeast Rolls

I rate these a 4 only because they aren't really yeast rolls. What they are, are delicious soft fluffy biscuits. This is the recipe I will be using to make biscuits from now on. I used the dough to make pizza pockets and they were awesome. I think the yeast addition just helps make them soft and fluffy.

Slow Cooker Beef Stew I

This recipe was okay but nothing to write home about. I had it on low for 12 hours and all the vegetables were complete mush. The flavor was pretty decent, though. I think it would have been quite improved if I'd only had it in the cooker for 8 hours or so.

Baklava

Another 5 star rating for a 5 star recipe. I stuck with the other reader tip to cut the baklava only partway to the bottom and I always pour cooled syrup over hot baklava. I've had picky Baklava people tell me this is incredible. It's never soggy, nice and crisp and chewy at the same time.

Antipasto Pasta Salad

Everyone loved this, even the picky kids at our Memorial Day picnic! I made a few additions - I used olive oil marinated dried tomatoes instead of fresh and also added some artichoke hearts. I also used roasted red & orange peppers instead of the fresh. According to my family this is now my "must bring" recipe to our family gatherings. To make roasted peppers, just buy the mini-peppers that come in a bag. Drizzle some olive oil in a skillet and throw in a handful or so of kosher salt. Roast the peppers on medium high, turning often until they are browned in spots and cooked through but still firm. Chop them up seeds and all for the salad.

Yeah so I was skeptical too from the title but... these cookies are by far the best tasting chocolate chip cookies I have ever made. Just the right texture too. I used a 1/4 cup measuring spoon for the dough and had to bake them a little longer because my oven runs cool. Also, I added 1/2 tsp cream of tartar which gives the tops that "crinkly" bakery look.

Cranberry Pistachio Biscotti

This recipe is fantastic and can easily be used with different variations. As we speak, I have roasted almond & toffee biscotti baking in the oven :) I've made this recipe over and over and it is incredible. Some of the best substitutions I've tried - 3/4 cups mini dark chocolate chips, 3/4 cups roasted almonds, 1/2 cup dried cherries; No nuts, just 1 cup Andes Creme de Menthe baking bits; and 1 1/2 c roasted almonds with 1/2 finely chopped crystallized ginger. This recipe is incredibly flexible and is definitely the best I've tried.

Real Hummus

I made this as per the updated instructions. Fabulous! The only things I changed were a little less lemon juice and I also added a shake of a mediterranean seasoning blend that I have. I've never made hummus before but I think this will be a staple. Super delicious and very good for you.

Orange Chocolate Chip Cookies

I used this recipe as a base recipe - what I was looking for was a tangy orange cookie that would bake up like a chocolate chip cookie. Success! They were flavorful, chewy, crispy on the outside, and nicely orange-y. I might add a tidbit of orange extract next time, but I think they were excellent. I omitted the chocolate chips, and used the zest of two large oranges. I also grated up 2 dark hershey's kisses and added them to the batter for a hint of chocolate and an interesting texture. Phenomenal!

Apple Pie by Grandma Ople

Since I first made this pie a few years ago, it has become a family celebration tradition. What a fantastic idea... an apple pie with a baked-on caramel topping. I've made this pie many many times and just now realized I hadn't reviewed it, so I am now. The only thing I add is pie spices - about 3/4 tsp cinnamon, 1/4-1/8 tsp nutmeg and 1/4 tsp of salt. I tried adding in some bourbon vanilla this time, right after the sauce was done cooking but before I put it on the pie. I bet it will be excellent :)

Chicken Pot Pie IX

COmfort food at it's best. This pie is a great example of the vast difference between frozen and homemade food. A little work to make, sure... but well worth the effort on a cold cloudy day. Yum!

Blueberry Coffee Cake I

This cake was pretty good. I did have to add more milk (wish I woulda read the reviews first) and even then I had to spoon the batter in with the fruit. didnt want a bundt (upside down) cake so I made it in an 8x8 pan which made it really thick but then there was way too much topping. It has a good texture and a nice flavor but wasn't quite what we'd expected for our easter coffee cake. I'd almost make this like a cakey cobbler instead, just triple the amount of fruit (or cut down on the dough) and make it in a 9x13. In any case, I made the recipe as directed and it isn't one I would say is "the best!" so I gotta give it 4 stars. It certainly is a good dessert and I will be making it again, but as a cobbler next time with less dough.
