Chicken in a Pot

Reviewed: Sep. 8, 2013
Was just ok. I made it as directed except I didn't take the chicken out of the sauce to thicken. I also doubled the sauce based on the other reviews. Definitely need to do that! My husband added some parm cheese and italian seasoning to his plate and he even said it was still missing something. I thought it was ok. Nothing fantastic. Just different than the usual dinner. If I make again, I will probably add some cayenne pepper, italian seasoning, onion powder, and maybe some more garlic. Just to add a kick of flavor.

Cajun Shrimp

Reviewed: May 13, 2013
This was a little too spicy for me. My husband loved it but it was so spicy for me that I couldn't even eat it. However, I washed the shrimp off after he cooked them and they tasted fantastic. Just different taste buds. The recipe itself is excellent. Great flavor. Next time (and there WILL be a next time) we'll use less seasoning.

Baked Kale Chips

Reviewed: May 11, 2013
These were pretty good. Reminds me of flash fried spinach. For the people saying that they don't taste like potato chips, the description says that they are addictive LIKE potato chips. Not that they taste like them. I love my flash fried spinach with lemon juice squited on top and a sprinkle of freshly grated parm. That made these perfect. Great choice for a healthy snack.

Chocolate Zucchini Bread I

Reviewed: Jul. 15, 2012
Amazing! I made this in mini muffin pans and baked at 325 for 25 minutes. Came out perfect. I also added walnuts because zucchini bread just isn't zucchini bread without them. I also used mini chocolate chips instead of full size. For some reason when I use the regular size, they tend to stick to the bottom of my pans. The mini chips don't sink to the bottom of the muffins. This is my "go to" recipe now.

Orange Roughy Parmesan

Reviewed: Jun. 5, 2012
This was "ok" for me. I used cod and while it was ok, I thought it needed more flavor.

Stuffed Pork Chops

Reviewed: Feb. 14, 2012
One word, AMAZING! I didn't have time to make my own stuffing so I used Stove Top. Stuffed it into a butterfly pork chop, cooked on the stove in butter to brown then baked as directed. Afterward making the sauce. Delicious! I wish I could give it 10 stars. It tastes so much better than any "Cream of Something" dish. Def a keeper and not much work involved. I served it with long grain wild rice. For the sauce, I cut up the pork chop into bite size pieces on my plate then spooned the sauce on top.

Ground Turkey Casserole

Reviewed: Jan. 8, 2012
As written, I'd give it a 2. I made changes to bring it up but it wasn't enough to save it. I doubled the tomato sauce but the sauce was still too cream cheese-y. And I love cream cheese. But it was too much. I mixed it all together and would definitely do that if you give this recipe a shot. I added mushrooms that I cooked in garlic and onion powder. Also added onion powder, garlic, and Cajun seasoning to the turkey while cooking. After it was done I had to add Worcestershire sauce just to make it less bland. Will not make again. I may make an adaptation to it by nixing the cream cheese and using chicken instead of turkey. And maybe even add broccoli. As is, I'd give it a 2 star. And that's being generous.

Chex® Pumpkin Pie Crunch

Reviewed: Nov. 22, 2011
Excellent!!! I think next time I'm going to bake it in the oven so the pecans are a little crunchier. Could even increase the butter/vanilla. I accidentally bought rice chex instead of the honey nut and it is still awesome.

Ultimate Shrimp Scampi

Reviewed: Oct. 26, 2011
Very good. Next time I'll add some more garlic and lemon juice. Could probably use another plash of Worst sauce too.

A great "chunky" recipe that isn't loaded with fat from cream cheese. Def a keeper!

Michael's Foccacia Bread

Excellent!!! I mixed rosemary in the dough in addition to sprinkling it on top. I used a combo of Romano and Parm on top too. Delish! This is my go-to recipe.

Cheddar Beef Enchiladas

Reviewed: Jul. 6, 2011
Made as written except I used more meat filling. That wouldn't affect the taste though. They were mushy. I made the enchiladas the night before and put them in the fridge (without the sauce). Then right before baking I poured the sauce on top and baked. The tortilla's were just mushy. The filling was good but that's about it. Not real Mexican but that was to be expected since it was a flour tortilla.

Fluffy Biscuits

Excellent! My husband actually said he liked them better than Pillsbury. This is my new go-to recipe. It didn't even take me 10 minutes to put them together. Thanks Nancy!!

Pork Tenderloin with Creamy Dijon Sauce

I made this with cream of chicken and regular mustard, it's all I had on hand. And it was still delish! It smells amazing while cooking and tastes even better. I am definitely sticking this in the recipe book.

Jay's Signature Pizza Crust

Reviewed: Apr. 16, 2011
Excellent! I baked on a pizza stone at 425 for roughly 20 minutes. I baked the first two pizza crusts for 10 minutes prior to adding sauce/toppings. The last one I put the dough on the hot stone and added toppings then baked. It was just as good. No need to pre-bake. I did pierce the dough with a fork before adding toppings. Also used cornmeal on the stone and added onion powder, Italian seasoning, and garlic to the dough with the salt. It was excellent and I will continue to use this dough. It baked crisp and chewy.

Sandy's Chocolate Cake

Reviewed: Mar. 26, 2011
One word for this cake: AWESOME! My husband is a huge chocolate lover and I made this for him to take to a work potluck. It was gone in minutes. He snagged a piece for me and brought it home and it was delish! This is my new chocolate cake recipe. I was nervous about the frosting since I've never made it with sour cream but it was the best frosting I've ever had.

Parmesan Sage Pork Chops

Reviewed: Nov. 4, 2010
Excellent!!!! I used thick cut pork chops and they were so moist and tender. I have made this with the pre-grated Parm and freshly grated parm, the freshly grated is the best.

White and Wild Rice Pilaf

Reviewed: Nov. 4, 2010
Excellent! I made as written expect I omitted the parsley and used chicken broth instead of vegi. I think next time I'll use half chicken and half vegi because the chicken broth flavor was very strong.
