Actually Delicious Turkey Burgers

So good! I waited until my husband had heated the grill & was ready to put food on it before telling him they were turkey burgers. He loved them! I used wheat germ because I had no bread crumbs. Used dried parsley also because that was all I had. The only addition I made was adding a small can of fire roasted diced green chiles to the mix. I also very lightly brushed uncooked patties with oil so they didn't stick to grill.

Meatloaf With A Bite

Very good. Needed more seasoning. The best thing I have learned from watching a cooking show is to make a small patty after putting ingredients together & cook to see if taste is to your liking.

Spinach Manicotti

This was wonderful! Basically followed recipe as printed with the exception of fresh spinach (that it what I had on hand), cottage cheese instead of ricotta (more flavor and cheaper), no sour cream (my husband dislikes it so much it ruins the taste for him), and added parmesan to the cheese mixture. Otherwise, followed directions precisely and was fantastic. Loved the salsa & wouldn't change that for anything. Such a good veggie recipe my family didn't realize there was no meat until I told them. Thank you!

Crookneck Squash and Tomatoes

Wonderful flavor. I was desperate one night & realized this can easily be done stove top. I mixed the sauce together with the exception of the olive oil & put tomatoes into it. Then sauteed the squash seasoned with salt & pepper in the olive oil until it was almost done. Added the tomatoes & green onion until just softened. Was ready in less than 12 minutes. I do love the oven version too, but sometimes forget about my veggies or someone shows up & I need extra so I have to compromise.

Salmon Pasta Salad

I used leftover halibut. Also added some red wine vinegar and black olives. I was out of vegetable oil for some reason, so I substituted grape seed oil, which I love.

Raspberry Angel Cake

I made changes to just about everything (out of necessity), but wanted to review this recipe because even with the changes, it was amazing. I used strawberries, because my mom had brought me a lot of fresh strawberries & I also used strawberry gelatin (accidentally used the whole .6 oz package. I read the recipe wrong & bought a white cake mix instead of angel food, so instead of going back to the store, decided to use that. Also had no almond extract, so used a tsp of coconut rum. My point is, I didn't try to change the recipe, but used what I had & because of the technique the recipe involved, it was wonderful.

Lime Chicken Soft Tacos

Very good recipe. When I am in a hurry, I like doing this with a rotisserie chicken from the store, then doing the sauce on the side for everyone to add on their own. I usually add a little bit of sour cream to the sauce to make it creamier. This sauce is also wonderful for fish tacos.

Chicken Pot Pie IX

This was very good. I used potatoes instead of peas. I am never able to get enough liquid inside of the pie, so I just heat up a can of chicken/turkey gravy to top it with when it comes out of the oven.

Onion Rings

These were delicious. Like other reviewers, I used a light beer instead of water and added some cayenne & garlic salt into the mixture. My pancake mix recipe called for an egg, so I also added that. The batter was the perfect consistency & stuck to the onions very well. They turned out very light & fluffy and my skeptical husband said they were very good & ate more than his fair share of them.

Elaine's Sweet and Tangy Loose Beef BBQ

This recipe must require the use of a "super" crockpot, because I have never been able to easily shred a roast after 4 hours. I seasoned my roast & browned on both sides before adding to crockpot. Also added beef broth instead of water & put all of the ingredients in from the start, since I had to go to work. When I came home, I shredded the beef & let cook some more until my husband came home. It was perfect!

Pumpkin Pie Cake I

This was great. I made it in a bundt pan & cooked for 63 minutes which was perfect in my oven. Didn't use parchment paper, just Pam sprayed to coat the pan. Also only used 1/2 cup butter (probably because I used a different type of pan), but it was perfect. My husband looked at me like I was crazy when he saw me sprinkling the cake mix directly from the package onto the pumpkin filling. But at the end, he said it tasted like the perfect mix of pumpkin pie & coffee cake. Thanks

Parmesan Chicken

This was very good. Pretty much followed directions except I baked at 425 for about 25 minutes as I didn't feel like taking the time to flatten the chicken. My cooktop was not working so I didn't brown the chicken on the stove either. When the chicken was almost done, I put some garlic bread in the oven, then sliced the chicken & melted provolone cheese on top. When garlic bread was done, I put chicken/cheese on the top to serve as open faced sandwiches with marinara sauce over the chicken & garlic bread. Yummy!

Breakfast Loaf

This is the exact recipe from a vegetarian cookbook that I use. The only exception is that in the cookbook, the recipe includes the sauteed mushrooms & olives. That is how I have always made it, excluding the red peppers & only using jack cheese if I have it on hand, because the recipe is very good just using the cheddar. I use only half the round of sourdough since it is only my husband and myself.
