Roasted Red Pepper Cream Sauce

This is super good and super easy. I was able to peel the skin off the peppers almost right after I took them out of the oven which saved some time. Next time I will save myself more time and clean up by making the sauce in a pot instead of a pan and using my immersion blender to blend the sauce. I didn't end up using the 2 cups of half and half, I used one and I think next time I'm not going to use as much butter either. I served the sauce over penne and it was perfect.

Zucchini-Chocolate Chip Muffins

I rated them based on ease of preparation since they're still in the oven baking and I haven't tasted them yet. I made quite a few changes. I omitted the chocolate chips (eventhough I love them) and used blueberries instead just to make them more health-friendly. I used half the oil and replaced the other half with applesauce. I also used a yellow zucchini because I bought some at the local farmer's market. I don't think that will affect the flavour. Very simple to make.

Addictive Sweet Potato Burritos

Very easy to make and very tasty. Didn't change a thing although I did use frozen sweet potato chunks that I cooked in the microwave. I would also used canned sweet potato chunks to save time.

Chocolate Oil Cake

**amendment to my previous review** It's been a few days since I made this cake and it's still very moist. Another thing I might add to this cake is cinnamon. For some reason I feel that flavour would compliment this cake. Also if I halve the recipe again I will use the full teaspoon of vanilla. It's just lacking a little something. Ok this was really, really good. I will definitely make it again when I need a quick and easy chocolate cake. I halved the recipe because I didn't want to make such a big batch. I used only 3/4 cup of sugar and I used 1/4 cup applesauce and 1/4 cup oil to lighten it up and cut the fat. I did sprinkle some chocolate chips on top just to add a little something special. Since I halved the recipe it only cooked for about 35 minutes.

Oma's Cottage Cheesecake

This was incredible. Tasted just like a regular cheesecake only with alot less calories. I topped mine with canned cherries and it was awesome. Will definitely make again.

Strawnana Bread

I'm giving this a 5 based on smell and ease of preparation. I just took it out of the oven and it's too hot to taste. I think next time I will use applesauce in the place of the oil because that's alot of oil. Also I suggest watching the baking process closely because it was cooked after 45 mins.

Strawberry Oat Muffins

These were good. Very tender and moist. The only changes I made was using low-fat buttermilk because it's all I had, using dried strawberries and adding frozen blueberries. They were prepared really quickly which I like, they were ready to bake in the time it took for my over to pre-heat.

Dark Chocolate Cake II

So so so easy! Awesome one-bowl chocolate cake. And so chocolatey. The coffee really brings out the taste of chocolate. I didn't have distilled white vinegar so I used white wine vinegar and it worked out fine. Will definitely make it again.

Banana Banana Bread

This bread is really, really good. I made a few modifications to make it healthier. I added whole wheat flour as a substitute for half the flour. I added blueberries and walnuts and I substituted applesauce for the butter. It's unbelievably moist and tastes great.

Pumpkin Spice Cupcakes

This was a great recipe. Very easy to make and frost. If I made them again I would cut the frosting in half because I don't like my cupcakes over-frosted. All in all in was a perfect recipe, no changes needed to be made.

Zucchini Brownies

Ok these are awesome! At first when I took them out of the oven, I took a whiff of them and I smelled zucchini and chocolate which was a little disconcerting. I used Chocolate Frosting I, for the frosting because I had used it before and I find it's easy to make and tastes great. I just finished a brownie and you can't taste the zucchini at all, but the fact that I know it's there makes me feel good because not only am I eating a delicious dessert, but I'm getting some more veggies into my diet.

S'mores Crumb Bars

I made this last night and they were super easy. I cut the recipe to make 12 servings instead of 36 since it's just myself and my boyfriend in the house. I did what others did and used whole graham crackers and beat them with a rolling pin to make largish crumbs. The only thing I noticed was that I didn't have enough to make thicker bars, they were more like a bark. So next time I will use more graham crackers and more butter and I'm sure they'll be perfect. Otherwise, as is, they are great and my boyfriend scarfed down 3 bars just in the first few minutes of taking them out of the fridge. For a quick sweet tooth satisfier, these are awesome.

Creamy Rice Pudding

I used Arborio rice and skim milk this time. The last time I used long grain rice and it didn't come out creamy enough. But this time around, it is super creamy. Smells and tastes delicious.

World's Best Oatmeal Cookies

These are actually the greatest cookies ever. Super easy to make-one large bowl and a wooden spoon and 15 minutes later you've got cookies. I used raisins the first time I made them and then raisins and mini chocolate chips the second time and needless to say they don't last long. Also if you cut the baking time by a couple of minutes they stay soft and chewy.

Colossal Cookies

I just made these this weekend and boy were they ever good. The recipe made a huge batch. I mixed them with my stand mixer and the batter almost spilled over. I brought a bunch to work and they were gone in seconds. I didn't add chocolate chips because my dog has to be able to eat everything I make, otherwise I get the sad, puppy dog face. They were really good.

Special Buttercream Frosting

Fab-u-lous! Best buttercreanm recipe I've ever tried. Didn't change a thing and it came out perfect. Loved how eventhough the cake was refrigerated overnight once it was left at room temp. it softened up again. Will definitely keep onhand to use with other cakes. I used a vanilla bean paste and it didn't change the colour of the frosting, it just added little specks of vanilla thoughout which I like.

Banana Pudding Cake

Good cake! Very moist and delicious. I will definitely make it again. So easy too. I followed the directions exactly and it came out perfect. My only change will be to make less glaze. I just drizzled it and it not only looks pretty but adds great flavor.

Very easy to make. I followed the recipe exactly but it was a touch dry. Still good and chocolately though. Not sure what I could do next time to improve the dryness.
