Disappearing Marshmallow Brownies

They were easy to make but I didn't find them to be very outstanding. I didn't have butterscotch chips so I just used chocolate chips. Maybe that's the reason they didn't taste nearly as good as expected. Also the marshmellows melted completely and I was expecting them to remain more in tact.

Peanut Butter Cookies VI

They were super easy to make and just like everyone else suggested I added an extra 1/2 cup of peanut butter. They do stay really soft but I'm not sure whether I like that or not. They are almost too soft. I like a little bit of crispness. I added mini chocolate chips. But overall, good cookie.

Gingerbread Waffles with Hot Chocolate Sauce

I didn't like these at all. I love the taste of gingerbread normally but these were too heavy with the taste of molasses. The batter was heavy too. I could barely finish one because of the heaviness and sweetness, I can only imagine what they'd be like with the chocolate sauce.

Pumpkin Spice Cupcakes

This was a great recipe. Very easy to make and frost. If I made them again I would cut the frosting in half because I don't like my cupcakes over-frosted. All in all in was a perfect recipe, no changes needed to be made.

Zucchini Brownies

Ok these are awesome! At first when I took them out of the oven, I took a whiff of them and I smelled zucchini and chocolate which was a little disconcerting. I used Chocolate Frosting I, for the frosting because I had used it before and I find it's easy to make and tastes great. I just finished a brownie and you can't taste the zucchini at all, but the fact that I know it's there makes me feel good because not only am I eating a delicious dessert, but I'm getting some more veggies into my diet.

Baked Corn Pudding

I gave it a two because it wasn't as expected. It tasted more like scrambled eggs with corn. Even my boyfriend who normally comsumes anything "corn" with exuberance, was a little hesitant with this one. It was easy to prepare though. Just not my favourite corn recipe.

Creamy Rice Pudding

I used Arborio rice and skim milk this time. The last time I used long grain rice and it didn't come out creamy enough. But this time around, it is super creamy. Smells and tastes delicious.

One Minute Chocolate Icing

I didn't beat it after I blended it. I let it stand at room temperature until it got thicker and then I spread it on the cake. My only issue with it was it felt gritty, like the sugar hadn't dissolved. It's possible I didn't heat it enough.

Colossal Cookies

I just made these this weekend and boy were they ever good. The recipe made a huge batch. I mixed them with my stand mixer and the batter almost spilled over. I brought a bunch to work and they were gone in seconds. I didn't add chocolate chips because my dog has to be able to eat everything I make, otherwise I get the sad, puppy dog face. They were really good.

Special Buttercream Frosting

Fab-u-lous! Best buttercreanm recipe I've ever tried. Didn't change a thing and it came out perfect. Loved how eventhough the cake was refrigerated overnight once it was left at room temp. it softened up again. Will definitely keep onhand to use with other cakes. I used a vanilla bean paste and it didn't change the colour of the frosting, it just added little specks of vanilla thoughout which I like.

Banana Pudding Cake

Good cake! Very moist and delicious. I will definitely make it again. So easy too. I followed the directions exactly and it came out perfect. My only change will be to make less glaze. I just drizzled it and it not only looks pretty but adds great flavor.
