Vegetarian Gravy

I tried to like this, I really did. I made it to go with poutine since I'm a vegetarian. I've made it twice and both times, even with subtle changes, I found it too thick and too oily. It doesn't reheat that well either. I think I will use a beef gravy recipe from now on and just use veggie broth instead. It's also super garlic-y and I'm not overly fond of that.

Roasted Red Pepper Cream Sauce

This is super good and super easy. I was able to peel the skin off the peppers almost right after I took them out of the oven which saved some time. Next time I will save myself more time and clean up by making the sauce in a pot instead of a pan and using my immersion blender to blend the sauce. I didn't end up using the 2 cups of half and half, I used one and I think next time I'm not going to use as much butter either. I served the sauce over penne and it was perfect.

S'mores Crumb Bars

I made this last night and they were super easy. I cut the recipe to make 12 servings instead of 36 since it's just myself and my boyfriend in the house. I did what others did and used whole graham crackers and beat them with a rolling pin to make largish crumbs. The only thing I noticed was that I didn't have enough to make thicker bars, they were more like a bark. So next time I will use more graham crackers and more butter and I'm sure they'll be perfect. Otherwise, as is, they are great and my boyfriend scarfed down 3 bars just in the first few minutes of taking them out of the fridge. For a quick sweet tooth satisfier, these are awesome.

World's Best Oatmeal Cookies

These are actually the greatest cookies ever. Super easy to make-one large bowl and a wooden spoon and 15 minutes later you've got cookies. I used raisins the first time I made them and then raisins and mini chocolate chips the second time and needless to say they don't last long. Also if you cut the baking time by a couple of minutes they stay soft and chewy.

Banana Banana Bread

This bread is really, really good. I made a few modifications to make it healthier. I added whole wheat flour as a substitute for half the flour. I added blueberries and walnuts and I substituted applesauce for the butter. It's unbelievably moist and tastes great.

Zucchini-Chocolate Chip Muffins

I rated them based on ease of preparation since they're still in the oven baking and I haven't tasted them yet. I made quite a few changes. I omitted the chocolate chips (eventhough I love them) and used blueberries instead just to make them more health-friendly. I used half the oil and replaced the other half with applesauce. I also used a yellow zucchini because I bought some at the local farmer's market. I don't think that will affect the flavour. Very simple to make.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Very easy to make. I followed the recipe exactly but it was a touch dry. Still good and chocolately though. Not sure what I could do next time to improve the dryness.

Addictive Sweet Potato Burritos

Very easy to make and very tasty. Didn't change a thing although I did use frozen sweet potato chunks that I cooked in the microwave. I would also used canned sweet potato chunks to save time.

Chocolate Oil Cake

**amendment to my previous review** It's been a few days since I made this cake and it's still very moist. Another thing I might add to this cake is cinnamon. For some reason I feel that flavour would compliment this cake. Also if I halve the recipe again I will use the full teaspoon of vanilla. It's just lacking a little something. Ok this was really, really good. I will definitely make it again when I need a quick and easy chocolate cake. I halved the recipe because I didn't want to make such a big batch. I used only 3/4 cup of sugar and I used 1/4 cup applesauce and 1/4 cup oil to lighten it up and cut the fat. I did sprinkle some chocolate chips on top just to add a little something special. Since I halved the recipe it only cooked for about 35 minutes.

Banana Bran Muffins

I substituted the butter for applesauce, but other than that, that's the only real change I made. There were good. Not very sweet which I like, so they'll be a good breakfast muffin. I added raisins because I like raisins in my bran muffins. Next time, if I make them again, I will add cinnamon for a little more flavour.

Quick and Easy Brownies

These were easy. I decreased the flour to one cup but they still weren't fudgey enough for me. I also decreased the sugar to one and a quarter cup and that worked out well. The only thing I really didn't like was the fact that they tasted too much like butter.

Oma's Cottage Cheesecake

This was incredible. Tasted just like a regular cheesecake only with alot less calories. I topped mine with canned cherries and it was awesome. Will definitely make again.

Baked Oatmeal Squares

I can only give this recipe a 3 and that's mainly for taste. These taste great but they crumbled completely. I cut them into squares but when I tried to get one out of the pan, they fell apart and that was very disappointing.

Strawnana Bread

I'm giving this a 5 based on smell and ease of preparation. I just took it out of the oven and it's too hot to taste. I think next time I will use applesauce in the place of the oil because that's alot of oil. Also I suggest watching the baking process closely because it was cooked after 45 mins.

Strawberry Oat Muffins

These were good. Very tender and moist. The only changes I made was using low-fat buttermilk because it's all I had, using dried strawberries and adding frozen blueberries. They were prepared really quickly which I like, they were ready to bake in the time it took for my over to pre-heat.

Vegan Brownies

I'm not a vegan, I just made these because they seemed easy. That they were. They've been cooling for a while and they seemed to have stuck to the pan. There was no mention of greasing the pan and I assumed with all the oil that I wouldn't have to worry about. It may just be that they're still a little warm though so we'll see. I cut down on a sugar a bit, I put in about 1 3/4 cups and they're still sweeter than I like. The seem to taste alright, certainly not the best I've made, but ok.

Brownie Frosting

I only gave it 4 stars because it seemed a little grainy but after reading the other reviews, I see that confectioner's sugar can be used too. I'll try that next time. The frosting is very sweet so I may use less sugar next time. I was skeptical at first because it seemed thin but after pouring it on the warm cake, it set up really quickly and really well. All in all, it was fast and easy and just what I was looking for.

Dark Chocolate Cake II

So so so easy! Awesome one-bowl chocolate cake. And so chocolatey. The coffee really brings out the taste of chocolate. I didn't have distilled white vinegar so I used white wine vinegar and it worked out fine. Will definitely make it again.
