Black Forest Dump Cake I

Everyone loved it and my husband said 'Don't lose the recipe'. Left out the pudding and used low sugar everything. Do make sure the butter is evenly distributed across the top or you'll have dry spots.

Oriental Style Ginger Dressing

Super easy and really good! I scaled it to half the amount and put all the ingredients into a Italian dressing shaker bottle, tossed it with some coleslaw mix, added some crunchy chow mein noodles and voila! A perfect side to Mongolian broccoli beef and rice. :)

Easy Salmon Cakes

Doubled the recipe for two cans and then doubled the hot sauce for more zing -- it wasn't. I thought it was a little bland, but DH and my 9yo son liked them.

Eclair Cake

Everyone loved this, but next time I will double the layers of graham crackers. They get really soft after sitting for some time so there's basically no substance or flavor to them. I used 1 box each SF vanilla and cheesecake pudding, SF Cool Whip, and made my own frosting.

Caramel Icing

Too much sweet and not enough flavor. Even my husband, who has an incurable sweet tooth, said this was too sweet. I used it to ice a pan of brownies and it's good, but lacking the caramel flavor we were hoping for.

Buttermilk Chocolate Cake with Fudge Icing

Drumsticks with Peach and Honey

We really like SE Asian foods so I was interested to see how this turned out. I left off the lemon (mainly because I didn't have any fresh ones on hand), used home canned peaches and 2 Tbsp honey. I also sprinkled with lemon pepper after it was all on the serving platter. I thought this was lacking in flavor and you couldn't really taste the peach *or* the honey. A 3-star by my tastes, but I'll give these a 4 because my husband thought this was good (he liked the sweetness) and wants me to make it again.

Applesauce Raisin Bars

Really good, although next time I will add a tiny bit more milk to the icing so it spreads easier. My 8 year old is on a raisin hating kick so he said they're just so-so and only ate one, but my husband says I have to make these every day!

Lemon Coconut Squares

We love lemon bars and we love coconut so when I found this, I had to try it out. Per other reviewers, I reduced the sugar by 1/4 c and added 1/4 c of lemon juice, but made no other changes. I also added the coconut after 10 minutes of baking time to lessen burning. The crust was thinner than we like so if I made this again, I would double the crust part. The flavor was good, but DH and I agree that the coconut doesn't add anything since the flavor is drowned in the lemon and really just flaked all over and fell off when you tried to eat the bars. I'll stick to my tried and true lemon bar recipe.

Best Chocolate Chip Cookies

Just finished mixing up a batch and these are great! Crispy edges and chewy middles. I mixed up 1 1/2 batch, but only baked 2 doz. and plan to drop the rest on waxed paper and freeze for near-instant cookie gratification later.

Super quick and easy to prepare and tasted great! A definite keeper! Hubby and I both agreed that it needed more heat though so next time I will add some red pepper flakes (as long as DS isn't home LOL).

Szechwan Shrimp

We really liked this and as the designated cook who's currently 8 mos. pregnant, I appreciated the ease and quickness that this came together!! I followed the recipe as written with the exception of adding an additional 1/4 tsp red pepper (my son wasn't home and DH and I like it hot!). Also, I did NOT precook the shrimp. Overcooked shrimp is rubbery so I just added it raw and cooked it until opaque before adding the sauce. To me, it lacked a little something though so I think I'll try adding some rice wine vinegar to the sauce next go-round.

Coconut Macaroons III

I decided to make these for DH because he loves coconut. I had a horrible time with this one, but not really for fault of the recipe. It was certainly simple to mix up, but then the trouble started. :( First the parchment paper managed to catch fire in the oven, set off the fire alarms and filled the house with smoke, and the cookies completely stuck to the paper, resulting in paper-bottomed cookies. Then the chocolate glaze I'd decided to dip them in turned grainy for some reason and refused to set up. After going into the bedroom and having a good 8-month-pregnancy induced emotional breakdown, I promptly returned and ate 5 of them. Overall, they are quick and easy to make and taste good, but lacking in some flavor -- maybe almond extract would be a good addition? Also, since they won't spread, I think it would be good to flatten them a bit and not leave them as rounded golf balls on the tray so the middles will cook more. After all this, DH was nice enough to tell me they taste good, but not outstanding, so no need to make them again since there are many others things that I make that are much better.

Baked Asian-Style Honey Chicken

I used thighs and drumsticks, doubled the sauce and added an extra Tbsp. of honey as well as 4 Tbsp of rice vinegar. Threw it all in a gallon Ziplock bag and let it sit in the fridge for a little more than an hour. I also turned the temp down to 400F because at the higher temp, the sauce would have burned and set the fire alarm off. At the lower temp it took about 45 minutes to bake. Hubby and son both say this one's a keeper!

Waffles I

I'm diabetic and can *barely* tolerate carbs in the morning at all since I am pregnant. However, I've been having a waffle craving recently so I made these for lunch instead and they fit the bill perfectly. This is a great from-scratch recipe! It's hard to find a whole wheat recipe that turns out light and fluffy. I used whole wheat flour instead of white flour, buttermilk instead of milk, melted margarine instead of oil, increased the sugar to 1 1/2 T and doubled the vanilla; then threw everything into the blender. It's just my husband and I at home this weekend so this made WAY more than we could eat, so I froze the rest for my son to toast for breakfasts. He'll be happy. :)

Beef and Potato Nacho Casserole

We liked the flavor of this and hubby and my son both said I should make it again, but I would suggest using Southern-style hash browns (cubed), not shredded hash browns because they will break down and turn into "mush". I also sprinkled a fair amount of shredded chipotle cheese on the top and this really added to the flavor.

Uncle Wynn's Bread Machine Rye

If you're expecting a dense rye loaf, this is not it. This is more like a light rye sandwich bread -- moist and light and smells wonderful while baking! My husband was so anxious to have some, he nearly got his hand sliced as I was cutting it! :-) The only change I made was to use vegetable oil because I was out of olive oil. I baked it on Light Crust and it turned out wonderfully.
