Southern Potato Salad

This recipe is truly just like you find in the south. One southern cook taught me to put the garlic and about 1/3 cup of chopped onion into a bowl with a bit of butter, then microwave for a minute, then add to the potato salad. It adds a nice flavor.

Pineapple Upside-Down Cake V

Easy recipe to please everyone. I've noticed that even those who don't get much of a thrill over sweets will love a slice of pineapple upside-down cake. What's great about this recipe is it looks like you went through a lot of trouble to make it but it actually couldn't be easier.

Carrot Souffle

I get rave reviews each time I make this. Just like the restaurants, I'm told! Be sure to cook the carrots until they are very, very tender. Makes it so much easier to get everything mashed and mixed.

Slow Cooker Sweet Potato Casserole

How nice it was to discover a slow cooker technique for one of my holiday favorites! This turned out wonderfully. The only thing I will do different in the future is skip out on putting the extra butter on top. It was a little too buttery for my liking with that layer on top.

Refried Beans Without the Refry

Amazing! These beans reminded me of the beans served at a restaurant I dearly miss back in my hometown. I substituted 2 of the cups of water for a can of chicken broth. After the 8 hours of cooking, there wasn't much need to mash them so I did not. There was a satisfying mixture of naturally 'mashed' beans and whole beans. I froze the leftovers in small sized storage containers and pulled them out for easy lunches during the week.

Holly Christmas Cookies

I've been making these for years and they always disappear in a flash! Having a helper to press the red hots on while you work on the next wreath is very very very recommended. You gotta work fast with this! Lost my original recipe, happy to find this one. Thanks!

Mom's Best Peanut Brittle

My first try at 'candy making' and I'm happy to report it was a lot easier than I imagined. I popped the pan outside where it was 40 degrees or so for about 10 mins to cool it down so I could speed up the process. Worked like a charm!

Just as good as the kind you buy in candy stores! I popped mine in the freezer about 5 mins to get them to dry quick. It was so warm in my house from the other baking going on!

Easy Chocolate Cake

This is a great, classic 'made from scratch' cake recipe. Beware cooks searching for a moist cake like that from a boxed mix. This isn't it! This is a more dense, sturdy cake. Almost brownie-like without the sickening sweetness of a brownie. For Christmas I baked this cake, then layed mini peppermint patties and milk chocolate chips on top right out of the oven. After a few minutes they were melted and I spread them around the top for a marbled mint chocolate frosting.

Eggnog Cookies I

Yum! My boyfriend couldn't keep his hands off of these! I took advice from some of the other reviews and made a few changes. I cut the spices down by half and upped it to 3/4 c of eggnog. I also made eggnog frosting using powdered sugar, eggnog and a pinch of nutmeg and cinnamon. I dyed the frosting bright yellow to make them a bit more cute.

Baked Brie with Caramelized Onions

Awesome recipe! I made it for a Christmas Eve dinner and everyone was quite impressed with it, though it was SO easy. I didn't bother with the apples, I didn't want a 'sweet' brie recipe. Some 'brie-newbies' might wonder about what to do about the rind. All a personal preference thing. I personally think the texture is a little gross, so I don't eat it. Some will argue that the rind is where the best flavor is. What I did was cut the top rind from it and leave the rest, that way I could easily scoop the tasty inner cheese from it.

I scaled this recipe down in quantity and it was a good thing as this one doesn't re-cook well. Great recipe though, just don't over-do the cornstarch.
