Spanish Rice II

This is an easy side dish or an easy meal with the addition of a protein. The vegetarians in my family enjoy adding cottage cheese as a topping to this. The meat eaters enjoy seasoned, browned ground beef along with it.

Todd's Famous Blueberry Pancakes

This is a perfect recipe. I made the batter the night before cooking, so it had about 8 hours to rise and thicken. They tasted like buttermilk pancakes without the expense of purchasing buttermilk!

Filled Apricot Cookies

This recipe makes perfect kolachky's. The dough can be tricky to work with, so be sure to keep it well chilled during the assembly process. Try to not over-mix or over-roll it. This will help to maintain the flakey, fluffy texture.

Hawaiian Banana Bars

This recipe is good for using ripe bananas that need to be eaten. It probably isn't a recipe for everyone, but a banana lover will find it delicious. I appreciated that the recipe called for ingredients I typically have on hand. This also makes a good breakfast treat with coffee.

This recipe is truly a treat! It has so many different flavors within one cookie. I am tempted to try this cookie as an oatmeal cookie. I believe that would be a hearty, delicious version of this recipe.

Oreo™ Cookie Bark

Rustic Autumn Fruit Tart

Great recipe! The crust is divine! I have made it with and without the cardamom (my mother does not care for it) and it was wonderful either way! I use extra orange juice and pears for more flavor.

Rum or Bourbon Balls

I make these every Christmas and they are always a hit! I even made them for the dessert table at my wedding. Be sure to allow them to "rest" in the refrigerator for at least 5 days before serving. This will allow the ingredients to soften so it will not be gritty.

I love making my own spice mixes, rather than buying the chemical laden prepackaged mixes available at the supermarket. This one was delicious! Adjust the red pepper flakes to taste as they pack some heat!

Whole Wheat Drop Biscuits

A healthier alternative to other biscuit recipes. The flavor will vary with your choices of ingredients. If using a soy milk that has been sweetened, the biscuit makes a good replacement for a shortcake and is delicious topped with sliced strawberries.

No Bake Peanut Butter Pie

Excellent no-bake pie! I used light whipped topping and neufchatel cheese in order to lower the fat and calories a bit. I also made a crust out of oreos and melted butter. This made the pie taste like a Butterfinger candy bar! Yum!

Vegan Brownies

Great, easy alternative to baking brownies with eggs! First of all, the white sugar issue needs to be addressed because some of the comments here state that raw sugar is the only way to make this recipe vegan. It is possible to bake vegan with white sugar. You just need to be sure you are using beet sugar, which makes up about half of the white sugar sold in the U.S. It is very easy to come by, especially in the northern half of the country. Just google "beet sugar brands." You can likely find it at your nearest supermarket. The only change I made when using this recipe was replacing half of the oil with vanilla soy milk, as one reviewer suggested. It definitely gave it more of a cake-like texture (which was still great), so next time I'll use all of the oil to get that gooey, brownie quality.

Creamy Au Gratin Potatoes

This is a great basic recipe. It does lack in flavor slightly. I suggest adding garlic powder or sauteing a couple of cloves of garlic and adding that to the sauce. Also, black pepper is a must. This recipe is so basic that it gives plenty of leeway for experimenting with different flavors.

Homemade Lofthouse Cookies aka Jiffy® Sugar Cookie

I loved these cookies! I loved them so much that I had to make another batch two days after my first. However, the second time I did not have Jiffy and had to use Bisquick, which I also decided to sift before mixing. The recipe as written here is so much better than my second batch. The Bisquick gave the cookies a salty, biscuit-like flavor, which is not what I had desired. Sifting the Bisquick led to flatter cookies, another undesired result. The suggestion to pipe the dough was a great idea, I used a 1M tip and it worked wonderfully. Also, I frosted with the Sugar Cookie Frosting recipe here on Allrecipes. It was a very good combination with these cookies!

Chocolate Chip Cookie Bars

Great bar cookies! I quartered the recipe and patted the dough into an 8" square pan. It worked wonderfully, although I did have to increase the baking time nearly 10 minutes because it was thick. I didn't have walnuts on hand, so I used pecans and they were a delicious addition.

Slow Cooker Fifteen Bean Soup

This is a good recipe for experimenting with a bag of 15 bean soup. Instead of ham hocks and bacon, I use a pre-cooked ham steak. I cube it and add it in the last half hour of cooking. Also, I add the juice of a half a lemon at that point.

Sugar Cookie Frosting

This frosting was great for frosting cookies made from the sugar cookie recipe on a box of Jiffy baking mix. It stays creamy, yet slightly firm on the surface. I replaced a quarter of the crisco with butter to give it a hint of butter flavor.
