Avocado Soup with Chicken and Lime

Very delicious! My family loved it. I added about a cup of leftover mexican rice for the last minute of simmering. I don't think it really added or took away from the taste, it just made it a bit more filling. With or without rice, I will definitely make this again.

Meringue Mushrooms

I had never made or even eaten meringues before, but I made these for my godson. He loved them and so did I. I didn't make the mushroom shape though, just used a large star tip and swirled them. Dusted with cocoa and they were delish!

To Die For Blueberry Muffins

Wow. The name really fits. The best blueberry muffins.....EVER! I doubled the batch and got 11 large muffins. I used frozen blueberries which I didn't defrost because I didn't want purple batter. I used the regular size bag of blueberries and got lots of them in each muffin. Look at the picture I posted. Excelente!!!

Hot Fudge Sauce II

Yummy! I was craving a hot fudge sundae and this is the recipe I chose because I had all the ingredients in my pantry. Sooo glad I did! It's excellent. The only thing I changed was I used 1/2 semi sweet chips and 1/2 milk chocolate chips, only because I didn't have a full cup of semi sweet. Next time I will use all seni sweet chips.I love the thickness of it when it cools down. Perfect. Thanks for this delicious recipe!

Tres Leches Cake

This is great. However, I've always added the milk mixture (with 1 tsp vanilla added) as soon as the cake comes out of the oven. If your cake forms a "hump" just slice it off to level it, then pour the milk mixture all over. The milk mixture distributes itself well when the cake is still hot. Let cool to room temp, then refrigerate still in the pan and covered with foil. I let it sit overnight. Once cold, just flip it onto a serving plate and garnish with whipped cream and fresh fruit. Deeelish!!

Sour Cream Pound Cake

So buttery good! A trick to make this moister: after creaming the butter and sugar, add 2 tablespoons of boiling water and beat for 1 minute. Continue the recipe as written. I add this trick to all the cakes I make where you cream butter and sugar together. I've made this 2 times in 1 week. Thanks for posting this winner!

The first egg popped as soon as it hit the water (maybe due to temperature difference) but the rest came out beautifully! Easy to peel and no yucky gray yolk!

Award Winning Soft Chocolate Chip Cookies

I have made this several times, and each time they are gone within a few days. Once I accidentally added banana pudding instead of vanilla (I wasn't wearing my glasses!). I realized my mistake when I was mixing because I could smell banana, but, what the heck! Into the oven they went and they were surprisingly good! Banana chocolate chip cookies were born! Thanks for a wonderful recipe.

Never Enough Green Bean Casserole

OMG! I did'nt expect this to be sooo good. I used french style green beans, but next time I'll use regular cut. The french cut were very thin. Thanks for the recipe, it's a keeper!

Julia's Easy Slow Cooker Chicken

This was very yummy! I used a pack of drums ans thighs I had in the fridge and added 1 onion chopped in big pieces. And since I didn't have any soup mix on hand, I subbed 1 teaspoon of onion powder, 1 teaspoon of garlic powder and 3 chicken boullion cubes. I also added 1 tablespoon of dried ground chipotle pepper. That added a great kick! Thanks for the recipe, will definitely make it again!

Banana Banana Bread

OK...So I had enough eggs in my fridge to double this recipe, and 10 very ripe bananas. I am now about to head to the grocery store to buy more eggs because this recipe was so fabulous, I have to make another batch immediately!!! I used 5 medium to large bananas and mashed them but left them chunky. I added 1/2 tsp cinnamon and 1 cup of chopped pecans. My very picky grandson had 2 slices and wants to take a loaf home to his mom. This is the best banana bread recipe ever! Thanks!!

Mom's Zucchini Bread

Delicious! My friend gave me a lot of zucchini from her garden. They were ginormous! I used 1 zucchini for this recipe and it shredded to about 4 cups. I used pecans instead of walnuts and half white sugar, half brown sugar. I have made this recipe everyday for 3 days now (she gave me lots of zucchini!) and I have shared it with my neighbors and my husbands co-workers. It was a hit with everyone!

Poblano Chile Enchiladas a la Gringa

Very Good! My family likes very spicy food so I tossed in a couple of super hot home grown chiles that are similar to chile de arbol or japanese chile peppers. Serranos would work well also. I topped them with the melted cheese, chopped onion and slices of avocados. I will surely make this again very soon.

Carol's Butter Pecan Cake

My family LOVED this cake, even though I over baked it. It was a tad dry but that was my fault. Even so, I was asked for the recipe by 2 people. Next time I will not overbake it it. I added a splash of vanilla extract to the frosting, Yum!

Paprika Chicken with Sour Cream Gravy

I just made this for dinner tonite. I changed it around a little bit tho. I had a leftover chipotle chile in the fridge so i threw it in the processor with the sour cream and cream of chicken. AWESOME!!! It came out spicy (just the way I like it) and creamy. I served it over white rice. Will definitly make this again.

Spicy Lime-Cilantro Marinated Flank Steak

AWESOME recipe! I made this with flank steak for Mothers Days and it was such a huge hit that I was asked to make it again for our Memorial Day BBQ. I also marinaded some jumbo shrimp in it and made kabobs. Delish!! We like our food spicier than normal so I used serrano chiles instead of jalapenos. Will definitly make this again.
