Hot and Sour Chinese Eggplant

Nice variation using eggplant. The flavors really stand out. I did take the advice of others and used rice vinegar, garlic and Vietnamese chili sauce. Yum!

Gourmet Mushroom Risotto

It's a keeper! I used only 1 pound of cremini mushrooms but sliced them VERY thin with my Japanese slicer. The mushrooms blended throughly with the Arborio rice. I used vegetarian broth and onion (forgot to buy shallots). I'm not an expert on risotto but this was delicious.

Okra, Corn and Tomatoes

A keeper! I fried the onion and okra in a small amount of bacon fat and omitted the bacon. Also threw in a little garlic and green pepper. Used fresh okra and fresh tomatoes and canned corn. My husband likes spicy so I divided the recipe and added cayenne pepper to his half. Everyone was happy!

Sydney's Squash

If you're tired of fixing the same old recipes, here is something different! I thought it was a little unusual but my husband and daughter loved it. I did add some mushrooms and covered it with fried onions since I was out of bread crumbs. I also used a little Old Bay seasoning. A wonderful change of pace!

Quinoa and Black Beans

EXCELLENT! My first taste of quinoa won't be my last. I followed the suggestion of others and used only one can of black beans. I also subbed parsley for cilantro and omitted cayenne. This recipe can be varied in a number of ways but was a big hit with the entire family. Thanks for a fabulous recipe!

Lite 'n Easy Crustless Pumpkin Pie

Imagine pumpkin jello. Looks nice but it had a bitter aftertaste. Could be the spices. I did not have "pumpkin pie spice" and used the standard spices listed on the Libby's can. The spices were a bit overpowering. Maybe some ice cream or whipped cream would help but I was trying to be good. ;)

Zucchini Cream Pie

Don't tell the kids the "secret" ingredient. Mine finished it suspiciously. I personally prefer zucchini bread over this pie but maybe because it was so sweet. I will cut the sugar at least by half next time. It also took over an hour to "set." Smells wonderful while baking!
