Italian Grilled Cheese Sandwiches

Here’s what I had on hand. Spelt bread, fresh slicing mozzarella and Trader Joe’s Vodka Sauce. I melted unsalted butter and added oregano, garlic powder & a little garlic salt, all to taste (pretend you’re making garlic bread). I brushed the butter mix on one side of the bread and tossed it, butter side down in a heated skillet drizzled with EVOO (for a nice brown crust). Then I placed a layer of thick sliced mozzarella on and topped with another slice of bread. I brushed the tops with the butter mixture and waited for the magic. Flip and brown the other side and done. Cut in quarters for easy dipping and serve with sauce. Here’s the reason for the long review: These tasted like THE BEST MOZZARELLA STICKS WE’VE EVER HAD. The grains in the bread crisped up and mixed with the seasoned butter just like Italian bread crumbs but better (this alone would keep me from using plain white bread). The fact that I sliced the cheese so thick gave a nice ratio of cheese to bread. They where so good, we picked up more cheese and regular marinara sauce (we liked it better with this) and made them the next night, served with Italian Wedding Soup (great idea from another reviewer!). As I write this I am starting to crave another one but I must control myself because these are not exactly diet food. I don’t think they would come out like this broiled, so I probably won’t try them that way. I definitely will, however, be making these again and again. Thank you NYCDAVE, what a treat!

Best Baked Chicken

OMG This is delish! I've been making this for about 3 months now so I could check out some variations. I will only use Stove Top Chicken Flavor cause that turns out the best every time (dumped the package in a large ziploc and roll over with a rolling pin a few times, gives it just enough crush to cover chicken but still crunch!). There's something about the lemon juice, soy sauce & sour cream combo that seems perfect. I mix it up in a bowl and let the chicken sit in it for about 5 min. Is it possible that this tenderizes the meat some? Dunno, but its moist and tasty every time! I use garlic powder & celery salt, which seems to work for us without being too salty. The melted butter on top is essential as I found out. Hubby LOVES this & so does everyone I make it for. Serve with something green & cranberry sauce and it feels like a holiday! Too good for words. Thanks so much!

Goat Cheese and Spinach Turkey Burgers

OMG! We do love these burgers! Made first exactly as directed (ok, a little extra cheese:) topped with carmelized onions and a little mayo/dijon spread. Then made again with feta & chopped black olives, thin sliced red onion to top and a homemade cucumber/yogurt sauce. We can't get enough of these! The most consistant response "this doesn't taste like turkey"! Last night made with goat cheese and chopped sundried tomatoes (not the ones in oil), yum! I will never again attempt a to make a turkey burger taste like ground beef! Great recipe, thanks!

Roast Sticky Chicken-Rotisserie Style

We LOVE LOVE LOVE this recipe! Perfect just the way it is! All the spices made the gravy a tasty tasty treat! (Hint: melt half stick butter in a pan add flour to thicken - then add pan juices & chicken stock - no lumps!) YUM YUM YUM! Thank you!
