Garlic Pita Bread Bites

Luscious Spinach Artichoke Dip

Very nice! Made at request of hostess of a bachelorette party. Could be baked longer, wasn't very warm, probably should have used a more shallow dish. Nice flavor.

Awesome and Easy Creamy Corn Casserole

Excellent but had to cook much much longer than stated. I'd guess at least and hour and a half. Served with Honey Pecan Pork Chops and will def. make again.

Baked Scallops

I'd rate a four the bf said a 5. I used the little scallops and it was nice (prefer to use the larger ones for meals where you taste more scallop). Served with pasta. Watch cooking time closely.

Basil Tomato Soup

Only used about 2/3 the amount of butter or so per the other reviews. Seemed perfect to me. Left no trace of grease floating on the top that way. Seems to be better the second day. Not quite as good as some of my favorite versions but very good and very tasty. May half the recipe and make often.

Carol's Chicken Chili

This is a five at least the way I made it. Instead of diced chicken, I wanted shredded. So I took 2-3 garlic cloves and crushed them and with the onion and olive oil heated them. Then I added the chicken broth. I submerged 3 chicken breasts in the liquid and boiled them until cooked. I removed the breasts and shredded with two forks. Then I used one can of beans, a can of chilis, and the seasonings and mashed them with a fork. and then added this to the broth to thicken it. I addded 1 and a half cups of frozen corn and added the shredded chicken and about 2/3 cup of shredded cheese. Once everything had incorporated i added almost another full can of beans (not mashed). It seems a little too much like soup so I added some cornstarch until it reached the desired consistency (careful not to add too much too fast). The BF said it tasted like chicken corm sooup and so he just salt and peppered it while I added a small dollop of light sour cream and some fresh cilantro and tabasco sauce. I didn't have any green onions so those were omitted. EXCELLENT!

Broiled Tilapia Parmesan

Haven't figured out why the bad reviews. This is great. So easy and fast. Did add a little olive oil and garlic to the fish before initial cooking but took longer possibly because of the type of oven doesn't broil the way you would think. Loved the topping. Used salt and celery seed in place of celery salt. Could def. still tast the fish in a good way. Though if you wanted to mask the fish taste it would be possible.

Amish White Bread

2-18-2007 This is the first time I've made bread and I had a lot of issues with the rising of the dough. I am thinking my house was too cold. Once I put it in the oven on low it worked I'm thinking perhaps it was denser because of this. I will try again. Also halved the recipe and it may have affected the outcome. Update 4-12-2007 Ok so I made sure the house was much warmer and I ended up with a slightly different result. However I also added a bit of water to aid with the flour mixing. What a difference! There should be a little more in the recipe. If not the flour sits on the dough and you get a dusty mess. When I finished adding the flour this time (adding water using my cupped hand while kneading) I had a beautiful round smooth ball of dough. I thought the flavor was nicer this time as well. Perhaps use butter or butter flavor or something other than canola spray to coat the pan...the flavor is still there and reminds me of the taste of something fried. Excellent when first warm (we ate half the loaf). Trying toast tonight :)

Easy Broccoli Quiche

Ok this recipe as I made it tasted amazing...so many compliments at our bridal party brunch...however the methods of cooking need to be overhauled. This actually makes 2 quiches. I took two packages of chopped frozen broccoli and microwaved until completely thawed. I added almost 1 onion (smallish so not to overpower) chopped and the butter to a skillet and cooked the onion through. Then I added the broccoli and the garlic. I unrolled both pie crusts in a pack and sprinkled a quarter of a package of shredded cheese over the bottom. Then I added half the broccoli to the pan and covered it with another quarter of the cheese. I beat 2 eggs with 3/4 cup milk and a tad more butter and poured that over the mixture. I tried to season everything with salt, peper and any other herbs I felt appropriate when I was cooking the broccoli. I did the same in the second pan with the other half of the ingredients. I baked for about 30 min but check often because all ovens are different. Was not too much for the pan as some suggested nor was it too wet. I used disposable round cake pans that are a little deeper. If you want to pre bake the crust a couple minutes so to avoid a gooeier crust that may be a good idea. I have no idea how someone could make it the other way it would have been too difficult. Will make many many more times.

Honey and Feta Spread

Haven't quite done this. Since I buy precrumbled feta I mixed honey with feta and added the pepper while mixing. DIVINE...I just love this combo of sweet and peppery.

We made this for the neighbors and served with a salad. Thought it was going to end up dry but really was not as you would think. Maybe could up the bechamel a little if you wanted an obvious sauce but proabably would not be as authentic. Good to esemble ahead of time and bake later

Banana Chocolate Chip Dessert

BF did n't think the bananas were strong enough but I thought it was just right. Served more like brownies, had no cream or ice cream. Baked in a 9 x13 and took about 15 min longer. Very moist...will make again.

We really liked this...I didn't measure the sugar or wine but added a little onion, butter, and garlic powder. Nice and thick sauce...do not cook at suggested time. Chicken cannot cook that long. Mine was perfectly juicy.

Goat Cheese and Spinach Turkey Burgers

Have wanted to try this one for a long time now. Excellent results. Used extra lean turkey and extra goat cheese. Chose a cheese flavored with thyme and red pepper (already crumbled). Added one egg and about 1/3 to 1/2 a cup of seasoned bread crumbs as per other reviews. Also added some dried basil and garlic powder. To half the mixture I added the spinach but the BF isn't a fan so I made his with a little chipotle tabasco sauce in the mix and sprinkled the outside with seasoning salt (which he loves). He ate his plain on a grilled kaiser roll and loved it. I ate mine with a little chipotle mayo (not necessary) and carmelized onions...no bun. I loved mine as well. The fat content in the meat was so low we didn't need to wash the fat tray from our George Forman (we don't have a grill). Outstanding!
