White Chili

This was a hit...I changed it to 12 servings but it only made 8-9. I also added one small chopped onion and used almost double the salsa because it was drier. Try not to use lower fat cheese as it doesn't melt well. I served it with Sassy Sangria which went over really well. I plan on making it again.

great recipe I used a cheap Burgundy and a little less sugar ... make just a few hour ahead and chill so flavors meld...not good leftover even one day

Chicken In Basil Cream

This was fantastic! Next time I would pound the chicken so that it cooks more evenly. Be careful not to put the sauce on too high. I served it over a little bit of pasta. The longer it stands the thicker the sauce becomes. I couldn't find just pimientos so if you didn't know roasted red peppers are the same and i cut them very thin so not to over power the basil. I saw some people added garlic, I forgot until the last minute so I added a little bit of garlic powder and it was great.

Pasta with Gorgonzola and Sweet Onion

I don't feel right about simply rating this because I used it more as a jumping off point. I was afraid of using so much onion. So I added: chopped frozen spinach, jarred roasted red peppers, fresh basil, and extra vinegar. It was fabulous, even my roommate who is sometimes afraid to try what I cooked said she would eat a full portion if I made it again.

Chicken Scampi II

This was good. I added a bit more garlic and some white wine. Unfortunately I over cooked the chicken a tad. Served with thin spaghetti. Forgot that scampis are always better the second day...lucky I have leftovers for tomorrow. Will probably make again.

Blue Cheese and Pear Tartlets

I didn't actually make this but I sent the recipe to my parents (who are very picky about quality of food) as a suggestion for their annual party. I was able to attend the party and try these beauties. DELICIOUS. The sweet and strong flavors mix together nicely. Even my friend who doesn't really like blue cheese was able to partake in these (though he said he really likes pears and I do not like pears). As for my parents they thought this came out very well and was super east to make. A winner all-around in my book.

Company Couscous

I don't know if this would be a 5 if I made it the way it says. I changed some of the methods used. I did not cook any of the vegetables (pepper, scallions, tomatoes). I removed the seeds from the tomatoes and cut them into quarters. For the parm. cheese and the basil, I decided to make homemade pesto (basil, olive oil, cheese,garlic cloves, pines nuts) added to a smidgen of mayo. I tossed that with the veggies. Then I added the cooked couscous in batches (to incorporate evenly) and added balsamic at the end. Complete heaven. Never made couscous before SO EASY!!!

The BF liked this a lot. Apparently the best thing I've made so far. Added more cumin, paprika to it. Also added tabasco...def. a keeper. So easy!

Spinach Lentil Soup

Good for being lentil soup (trying to be healthy is always tough). Added a little garlic powder. Used instant brown rice added when beans were added. I like to serve with salt, pepper, vinegar and a little parm. cheese. Will probably make again.

Tea Biscuits

I halved the recipe which should make 10 but I only got 8 out of it (I wouldn't want to make them any smaller). I also added a tiny bit less salt per the other reviews. This is between a 3 and a 4. The main problem we had was that they were too crumbly. You couldn't break in half to insert butter or honey in the center. I would say served hot you can melt butter on top and then drizzle with honey. Difficult to eat with your hands. Suggestions on if I did something wrong? I would say with butter and honey the stars are up a notch though. Good flavor.

Golden Penny Pancakes

I decided to make this because I had mistakenly mixed too much cheese into a recipe of egg and milk. Salvaging a cup of the extra cheese I made these. Unfortunately I'm not the best pancake maker so the first few were raw and then the next few were burnt. I liked the flavor though it wasn't really cheesy making me think the same as the other person who said that it was just adding more calories. I liked the sweetness though some thought they were better with salt and pepper , I did not. It may need something to top or dip them. I'm not sure if I'll make them again (since it was a fluke in the first place that I made it). Update: Only used half the batter the first time around. A friend who makes pancakes well finished off the rest and we ate them with our hands as appetizers with salsa. Much better and have changed from 2 stars to 3 stars, possibly add more spice to pancakes for a savory taste (chili powder perhaps).

Very nice! Made at request of hostess of a bachelorette party. Could be baked longer, wasn't very warm, probably should have used a more shallow dish. Nice flavor.

Just as it should taste! I even used turkey dogs and still thoroughly enjoyed these. No need to do anything but tear dough at perforation and roll up the dogs. We served at a bachelorette party where we called them porkers in bed.

Feta Chicken

Update 5-2-2007 Oh my I think I fixed this to perfect! So I didn't have enough of the feta so I mixed it with about 2 tbsp of ricotta cheese. I also sprayed the top of the chicken with cooking spray. It browned up more was less dry and was exactly what the chicken needed. Though I served with some couscous we didn't really like. Still trying to find the perfect side dish for a non-veggie eating BF :( 1-25-2007 This was easy and good! I think it needs a little something else. I don't know exactly what. I served with spaghetti with red sauce so it had a lot of flavor. Probably make again.
