Gourmet White Pizza

The BF said 4.5. Though here are the changes I made. I cut up one raw chicken breast in small pieces and then cooked it on top of the stove in the marinade from Chicken Diablo from this site (we had leftover from the previous evening). I also had about 4 slices of leftover bacon to cook and I cut that up small and cooked on top of the stove. Instead of pesto I had this sun dried tomato brushetta in a jar that has a lot of nice flavor to it. I made the sauce as it said more or less then layered in this order: sauce, chicken, cheese, bacon. I think a little mozz. like half and half would have been good. All the feta was a little heavy for me. Very tasty.

Honey and Feta Spread

Haven't quite done this. Since I buy precrumbled feta I mixed honey with feta and added the pepper while mixing. DIVINE...I just love this combo of sweet and peppery.

Sesame Noodles

This was delicious. I didn't toast the sesame seed but they were flavorful enough we didn't need to. This can be a great base. We used more as a side or a bed for some beef I tried to marinate with one of the marinades from the site. I thought the beef could use more flavor. Thinking of trying with other proteins and cooking them in this sauce. EXTREMELY easy.

Cheddar Chicken

Was worried about the cheese sticking so let it out until the end and sprinkled it con top. Was most dissappointed that you couldn't taste the cheese even when using a sharp variety. Wasn't bad just thought we would like more. I think I"m starting to find I prefer bread crumb to cornflakes . Probably won't make again.

While both of us like it the taste wasn't much different from actual peas. I did like the consistency so I guess if you want something like that and aren't making potatoes it might be better. Will probably make again. Very very easy. Made with cheddar chicken.

Easy Broccoli Quiche

Ok this recipe as I made it tasted amazing...so many compliments at our bridal party brunch...however the methods of cooking need to be overhauled. This actually makes 2 quiches. I took two packages of chopped frozen broccoli and microwaved until completely thawed. I added almost 1 onion (smallish so not to overpower) chopped and the butter to a skillet and cooked the onion through. Then I added the broccoli and the garlic. I unrolled both pie crusts in a pack and sprinkled a quarter of a package of shredded cheese over the bottom. Then I added half the broccoli to the pan and covered it with another quarter of the cheese. I beat 2 eggs with 3/4 cup milk and a tad more butter and poured that over the mixture. I tried to season everything with salt, peper and any other herbs I felt appropriate when I was cooking the broccoli. I did the same in the second pan with the other half of the ingredients. I baked for about 30 min but check often because all ovens are different. Was not too much for the pan as some suggested nor was it too wet. I used disposable round cake pans that are a little deeper. If you want to pre bake the crust a couple minutes so to avoid a gooeier crust that may be a good idea. I have no idea how someone could make it the other way it would have been too difficult. Will make many many more times.

Pork Chop and Feta Skillet

We liked this alot. I served it with sliced potatoes and salad and apple sauce. I tried to stuff the cheese in the pork chops but I bet the taste is the same for ones taht are just covered with it. Probably would be easier. Very tasty however.

Alternative Baked Salmon

I'd say this was a 3.5. Took much longer to bake than said and I wasn't thrilled with the results. I don't think I added enough mayo to make a paste. I thought it was a little bland. Probably will tweek- was expecting more I think.

Carrot and Cilantro Soup

Not what I was expecting form the name...took some getting used to at first. The pepper certainly gives it a mexican flare. Can't decide if I will make again. Won't be what I will use for my "carrot" soup however. Taste is quite good though.

Quick Gnocchi

For gnocchi I really liked this. The BF wasn't the greatest fan but that's of gnocchi in general. So easy and fast. Didn't need all the flour so add slowly. Served with marinara and pesto sauces. I could only find buter flakes so the gnocchi had a buttery taste. Probably make again.

Szechwan Shrimp

I really liked this...the only thing was the heat was too much (and I eat tabsaco straight on bread and cream cheese) I'll cut back next time. Also because green onions cana be strong I added a few for color and then chopped up one medium thick slice of regular onion since restaurants usually include regular onion. Was worried about the ketchupy taste because I've had Thai food in restaurants with that problem but I didn't think it tasted like that at all. Though if it waas someone who omitted ginger or something I could see how that would happen.

Crunchy Mexican Meatballs

Update: 9-9-2007 I made this again with a pound of ground pork plus one egg, one shallot chopped, one garlic clove chopped, the bread crumbs, and spices (plus a litle seasoning salt, pepper and garlic powder) I added about a tsp of browning sauce to flavor the pork as well. I crushed up two hand fulls of tortilla chips and added this to the inside of the mix. Instead of baking I browned the balls in a pan with only cooking spray for lubrication. I made them about half the size of a golf ball almost. 2-28-2007This is like a 3.5-4. I think I might make something similar again but I'm not sure. Tasted good but we weren't fighting over them. I'm had made a sauce using milk, wine, ground mustard, garlic powder and processed cheese for some crusty bread for something else and we used that to top some of the balls. I think I might prefer without the cruchy outside. I made way too much dipping sauce since I was the only one who ate it. Added 1.5 tsp of minced chili pepper for some kick. Wished I had minced the onions in the food processor way too big at finely chopped.

Chili And Cheese Stuffed Chicken Breasts

This was ok. I liked it pretty well because the side dishes I made were flavorful and moist. I had some plainer side dishes for the BF and he didn't think this was very good. He said the insides were dry. I didn't use as many chicken breasts so we only had 2 for the filling. I used the leftover filling as a side dish (see pic). I would add some chili powder. For the roasted chili I held a jalapeno over the burner to roast and then I deseeded it and chopped. Perhaps next time I will add a tad of cream cheese to the filling and make spicier. Though, I don't know if I"ll make this again.

Pizza Muffins

These were pretty good. maybe a little wet. I think I was worried about the dryness and over compensated. Used some sun dried tomato bruschetta in place of the tomatos (couldn't find what the recipe called for). Proabably won't make again though.
