Chicken Enchiladas II

We ate this and didn't hate it but we are very confused about why anyone would call this an enchilada. It was an interesting flavor...not great not bad but just weird. I might make this again. I wouldn't recommend this to anyone interested in actual Mexican food.

Golden Potato Soup

Best potato soup I ever had. Don't cook too long or the potatoes will start to break down and your soup will become grainy. I used 2% milk, ham, vidalia onion, and velveeta. Next time I might get a block of american sliced from the deli so I can grate it myself like I did with the velveeta. The taste was still great.

Swiss Chicken Casserole I

This was ok... I added 1 pack of frozen chopped broccoli to the bottom. I think I should have cooked it less. I also would season my soup more. This was my first attempt using soup to cook.

Can't Leave Alone Bars

One of the easier and best desserts I've made yet. I plan to serve them to in the teacher's room at school. today. Hope my coworkers like them as much as I do. I was worried that they wouldn't seem bar like since I was using cake mix but they were perfect. I'd be interested in forgetting about putting on the dots of dough and adding chopped nuts to the top. I love the consistency of the chocolate and although I cooked my milk too long and had to use a whisk to fix the sepaaration problem they still came out alright. I used fat free sweetened condensed and you couldn't tell.

Satay Chicken Pizza

This was good. I used thai style peanut sauce with honey from this site with a few modifications and instead of the pita bread I made a flatbread dough. It's really fast and worth the extra 10-15 min it takes to make.

Upside Down Pizza

Used combo of sausage and hot italian turkey sausage instead of beef. Used double the 2 cheeses and 26 ounce jar of sauce. Added rosemary, basil, oregano, sugar, pepper, salt and cinnamon to the sauce. BF said it was the best thing I'ven made in 2 years. Would put a second layer of dough on the bottom next time (partially bake that layer before adding the ingredients.

White Pizza

Not having made this I will not comment on the taste only on the name. Traditionally something called white pizza in NY and New England is olive oil and garlic sometimes without any cheese at all. New Haven is famous for white pizza and white clam pizza. I think the reviewer should not be rating the taste based on the name in this case. I think a better suited name would be White Sausage Pizza since it is misleading what I might find here. Originally I was not looking for the type of pizza as in the recipe when I did my search. However I do plan to try this eventually when I'm not watching my calories. Since it won't let me rate I will rerate when I try this but I'm assuming it will get a 4 star rating based on the description.

This was delicious! I tried to fry the eggplant but it didn't work well since it is so porous. If you breaded it like when you have Parmesan it might be easier. I baked it instead. I had no breaf but I used lamb, beef, veal meatloaf mix and it was great. I thought it might be too much bechamel at first but it wasn't after all. I halved the recipe and it worked better than it seemed so I made it in a smaller pan. I never had moussaka but I thought it was great and I would definitely make again. I used the same pan for the sauce and the meat and just rinsed in between to cut down on clean up. If you do certain parts at the same time you can drastically cut down on time. For example while the eggplant sits make the meat sauce. Then while the eggplant cooks make the bechamel. The meat will cool enough to add the egg and then everything is ready to be layered.

Pumpkin Chocolate Chip Bread

I didn't include the pumpkin pie spice because the spices in that were already part of the recipe list. Also I included more c. chips. Unfort. I think the spices overwhelmed the pumpkin flavor. It was also a little dry to cook the inside. I think I will stick to my pumpkin chocolate chip cookie recipe for now.

Beef Burgundy Over Noodles

about 3.5... A little bland, and because of the beef I had on hand I couldn't use the same preparation. I added a garlic clove and used half wine and half broth. Served over egg noodles. MIght make something similar again.
