Simple Whole Wheat Bread

I agree with another reviewer -- the nutty, slightly sweet taste of this bread is very reminiscent of the Arnold brand wheat bread. I mixed and kneaded the dough in large Dutch oven, and then let it rise in an upside down plastic cake server I had greased so clean-up was very easy -- no messy counters! I also made 2 loaves and split the dough for the last loaf into a 12-hole muffin tin for large rolls. It worked out fine. Very tasty -- definitely a keeper! Thanks!

Fruity Party Punch

Good all-juice blend. Does tend to separate if you go with organic juices so be sure to serve from proper punch bowl and not pitcher. Easier to stir up in punch bowl.

Caramel-Glazed Flan

Made this recipe as is and even forgot to get it out when the oven timer went off. It ended up in there for an extra half hour but was very forgiving and had no problems with it! My entire family loved it and we'd all given up flan as being too rich with the heavy cream and too cholesterol-laden with the whole eggs the usual recipe calls for. This was a welcome "light" version that didn't sacrifce any taste. Very mild and creamy vanilla -- mmm!

Sweet Carrot Salad

My fav carrot salad always has pineapple in it! So glad to see someone posted it. I've used maple syrup or sugar in place of the honey and Nayonaise to make it vegan before -- still turns out good. If the crushed pineapple seems too runny, go with tidbits.

Zucchini Brunch Bake

I helped my 5 year old make it with 1 zucchinni and 1 yellow crookneck squash. She can't used a sharp knife, so we grated it instead. Baked up nicely with a light quiche-like texture in a glass 8x8 pan.

Indian Sweet Bread

Very simple to make. I substituted 1/4 of the flour with whole wheat pastry flour and liked the "nutty" taste that resulted. Very similar to chapatti, just sweeter.

Risotto with Sun-Dried Tomatoes and Mozzarella

I scaled this for 4 servings and found it each person could have a generous 2 cups. I opted for vacuum packed sun-dried tomato rather than oil packed and used nonstick cookware to cut back on the fat. Lower fat cheeses also. I chose to embellish since the listed version looked a bit plain. I added 2 oz chopped green onion, 1/4 tsp. oregano, garlic, and 1/2 tsp pepper. Capers would have been a welcome addition but I didn't have any on hand. I found this took extra water and about 35 min to be really done. The results were a hit because it was like "pizza rice!" Spouse suggested adding vegetarian "sausage" crumbles and instead of stirring in the cheese, put the rice in a casserole, cover with the cheese and slip under the broiler until melted so it really would be "pizza rice." Definitely would make this again.

Quite good. I put the sugar and vanilla to dissolve with the hot coffee and don't bother with the boiling water. Once it chilled in the fridge, I added 1 cup of 1% milk since I'm not crazy about cream. Will make again -- thanks!

Applesauce Cake I

I've made this cake twice. Both times I used Earth Balance vegan spread in place of the butter to make the cake vegan. The first time I used unbleached white flour and added one small grated zucchini. That combo worked out nicely. The second time I used 1 cup unbleached white flour and 1 cup whole wheat flour and changed it to Craisins instead of raisins. Also spread Tofuti "Better Than Cream Cheese" on it while it was hot from the oven. That worked out nicely too. A keeper -- thanks!

Green Tomato Cake

I used 2 cup tomato puree and skipped the 1 tbs salt since I wasn't draining them. It turned out fine -- a moist spice cake. The green color is surprising. I wasn't planning on frosting, so I sprinkled a few extra raisins and walnuts on top before sliding it into the oven. The raisins sank a bit but the walnuts stayed. 2 cups of sugar is a lot, but it helps counteract the green tomato. Even so, I could still taste a bit of "green" so a 4 rather than a 5.

Basic Crepes

To make this a crepe style variation on the Chinese "scallion pancakes" I skipped the milk and used all water. I also added minced green onion to the batter. When done, cut into wedges and then dipped into equal parts soy sauce and vinegar. Done this way the scallion pancakes don't have to be kneaded and spiral-rolled so it is that much faster. It turned out quite good. Thanks!
