Eggplant with Garlic Sauce

Not bad, but next time I'd have to make again using fresh mince garlic. This much powdered garlic gave the sauce a texture I do not like. The flavor was good but the grit was weird.

A Number One Egg Bread

Not enough sugar... this thing is HUGE. It was as wide as my half sheet pan when made as a braided round wreath... so 13 inches in diameter. Baking time is too hot and too long. I did NOT preheat based on reviews warning about it. I put it in and started at 375 deg and after 20 min I started to worry, so I cranked it to 350 and went another 10 min for a total of 30 min baking. Then I let it cool. It was fine, but a little darker on top than I like. Very good texture and airy though. Also a nice yellow color and easy dough to work with. Next time I am going to try with 1/2 cup sugar, butter instead of oil, and 350 deg for 30 min or 325 for the 40 min.

Apple-Cinnamon Baked French Toast

This reminds me of apple brown betty and other bread pudding-like desserts. So I halved it, baked for 40-45 in an 8x8 glass pan, and served it with hard sauce. It was good and served 4 people well. I also used 5 slices of Arnold Whole Wheat bread since I didn't have french bread and it worked out fine.

Sweet Carrot Salad

My fav carrot salad always has pineapple in it! So glad to see someone posted it. I've used maple syrup or sugar in place of the honey and Nayonaise to make it vegan before -- still turns out good. If the crushed pineapple seems too runny, go with tidbits.

Basic Crepes

To make this a crepe style variation on the Chinese "scallion pancakes" I skipped the milk and used all water. I also added minced green onion to the batter. When done, cut into wedges and then dipped into equal parts soy sauce and vinegar. Done this way the scallion pancakes don't have to be kneaded and spiral-rolled so it is that much faster. It turned out quite good. Thanks!

Zucchini Brunch Bake

I helped my 5 year old make it with 1 zucchinni and 1 yellow crookneck squash. She can't used a sharp knife, so we grated it instead. Baked up nicely with a light quiche-like texture in a glass 8x8 pan.

Quite good. I put the sugar and vanilla to dissolve with the hot coffee and don't bother with the boiling water. Once it chilled in the fridge, I added 1 cup of 1% milk since I'm not crazy about cream. Will make again -- thanks!

Avocado Quick Bread

Just "ok." Moist, dense, bread, pleasant enough. I cut the sugar down to 1.5 cups and found that sweet enough. Nice to use up avocado, but give me carrot quick bread any day.

Green Tomato Cake

I used 2 cup tomato puree and skipped the 1 tbs salt since I wasn't draining them. It turned out fine -- a moist spice cake. The green color is surprising. I wasn't planning on frosting, so I sprinkled a few extra raisins and walnuts on top before sliding it into the oven. The raisins sank a bit but the walnuts stayed. 2 cups of sugar is a lot, but it helps counteract the green tomato. Even so, I could still taste a bit of "green" so a 4 rather than a 5.

Applesauce Cake I

I've made this cake twice. Both times I used Earth Balance vegan spread in place of the butter to make the cake vegan. The first time I used unbleached white flour and added one small grated zucchini. That combo worked out nicely. The second time I used 1 cup unbleached white flour and 1 cup whole wheat flour and changed it to Craisins instead of raisins. Also spread Tofuti "Better Than Cream Cheese" on it while it was hot from the oven. That worked out nicely too. A keeper -- thanks!

Fruity Party Punch

Good all-juice blend. Does tend to separate if you go with organic juices so be sure to serve from proper punch bowl and not pitcher. Easier to stir up in punch bowl.
