Super Squash

This is a great 'comfort food' recipe, as others have said. This isn't a dish I would call healthy, though. Sad to have that much beautiful, healthy squash drowned out by so much fat and calorie laden goodness. Just a normal portion made me feel worse after the meal than a typical veggie dish. Use with caution. It is definitely tasty, just not healthy...

Super Seven Spinach Salad

This salad is so great for a healthy and quick meal with very little clean up. I am an avid 'recipe follower,' but the seven ingredient element of this dish makes it easy to substitute other fruits/nuts/cheeses to make the perfect salad, no matter what you have on hand. My favorite rendition so far includes a dried fruit blend including blueberries, raspraspberries

Quinoa and Black Beans

I added 2 cups frozen chopped kale (at the same time as the corn) instead of the cilantro and it was awesome, plus more nutritionally dense.

Stir-Fried Kale and Broccoli Florets

My hubby and I love kale, and this recipe is great. I would differ from other reviews, however, in that I would steam the broccoli first and let the kale cook itself in the stir-fry. Also less lime juice is a must! I used garlic scapes instead of garlic and it was a nice, subtle garlic flavor rather than overpowering--very tasty! The only other problem with the recipe is that there is NO WAY you could feed 6 people with the amount it makes. I could have eaten the whole thing myself! Yum!

Seven Layer Tortilla Pie

This was a pretty quick make and the taste was awesome! I used chipotle salsa for added flavor and it was amazing! Served with extra chopped tomatoes, sour cream, and guacamole made for a beautiful presentation.

Fettuccine with Sweet Pepper-Cayenne Sauce

Just made a few modifications: used millet instead of fettuccini (a great texture for the excess sauce!), used Greek yogurt instead of sour cream, and added spinach at the end, after taking the mixture off the heat. I loved the heat/cream combination. The flavor was fun. A definite repeater!

Texican Squash

This was a pretty disappointing recipe. I even used jalepenos to spice it up, but to no avail. I give it a B+ for ease, but a D+ for taste. I wouldn't bother again.
