Sausage Egg Casserole

This is a great make ahead breakfast casserole. I cut the recipe in half. If you do this make sure you use a large enough dish so it will cook within the 40 - 50 minutes. The first time I made it I used a smaller dish and it was too thick to cook through. This also reheats well for leftovers.

Health Nut Blueberry Muffins

Very yummy! I added two teaspoons of flax seed to add to its health value. My 4 year old loved them. I will definitely be keeping this in my recipe box. Very easy to make and so worth having a healthy version of a breakfast favorite. Update: These freeze and reheat in the microwave very well. They don't keep as long as other muffins.

Strawberry Shortbread Pie

To me the shortbread version of strawberry pie is the best. I wanted a sweeter glaze and used 1 cup sugar with 1 cup water with the 3 T. cornstarch and package of strawberry gelatin. I also kept my strawberries whole. I made a homemade crust of 1/2 cup ground shortbread cookies (ground in food processor) then added 1/4 cup sugar, 1/2 cup flour and 1 cold stick unsalted butter cubed. I pulsed this in my food processor and formed this in a pie dish. I baked it at 350 for 20 minutes. Let it cool before adding the strawberries and glaze. A wonderful way to enjoy fresh summer strawberries.

Chicken with Wild Rice and Balsamic Cream Sauce

Vegetarian Four Cheese Lasagna

This is fantastic! I have never liked vegetarian lasagna and this can replace a meat one in my house any day. I had a lot of fresh veggies from the CSA (community supported agriculture) that I'm a part of so I made some additions to the recipe. I started by caramelizing half an onion sliced thin. Added a package of sliced baby bellas and chopped up one bunch fresh spinach. I roasted my eggplant 30 minutes in a 400 degree oven by first cubing it and sprinkling olive oil, minced garlic, salt and pepper on it and stirring it half way through. Then mixed the veggies together to be my veggie portion. I used home canned pumpkin and tomatoes in place of fresh and used no-boil noodles. I mixed my tomatoes in with the tomato sauce to make it spread easier. I also cut the feta down to 4 oz. It was the perfect portion. Note: If you want this dish to be truly vegetarian you need to find feta that does not have animal rennet in it which is the stomach lining.

Zesty Slow Cooker Chicken Barbecue

Superb! So easy and the chicken is so flavorful and tender. I did add some sliced onion and used Dinosaur BBQ Sensuous Slathering Sauce. The perfect combination.

Pork Chops Stuffed with Smoked Gouda and Bacon

SUPERB! This was spectacular. I followed another recommendation of pan searing the chops. I deglazed the pan with a chardonnay and added some cream, and extra parsley, gouda and bacon with a sprinkle of salt. This sauce went wonderfully over the chops. As my husband says, "you can't go wrong with pork wrapped in pork".
