Sausage Egg Casserole

This is a great make ahead breakfast casserole. I cut the recipe in half. If you do this make sure you use a large enough dish so it will cook within the 40 - 50 minutes. The first time I made it I used a smaller dish and it was too thick to cook through. This also reheats well for leftovers.

Wild Rice and Asparagus Chicken Breasts

Very easy to make and extremely tasty. I am partial to brown rice (the 50 minute version) and used that. I also added sliced garlic with the asparagus. That helps to infuse garlic into the oil (which I didn't have peanut oil so I used 3 T of veg oil and 1 T sesame oil.) The final dish was absolutely delicious. A keeper in our recipe box.

Garlic Chicken

Delicious and easy. Be careful not to overcook. The chicken can be done as early as 20 minutes depending on the size.

Zesty Slow Cooker Chicken Barbecue

Superb! So easy and the chicken is so flavorful and tender. I did add some sliced onion and used Dinosaur BBQ Sensuous Slathering Sauce. The perfect combination.

Vegetarian Four Cheese Lasagna

This is fantastic! I have never liked vegetarian lasagna and this can replace a meat one in my house any day. I had a lot of fresh veggies from the CSA (community supported agriculture) that I'm a part of so I made some additions to the recipe. I started by caramelizing half an onion sliced thin. Added a package of sliced baby bellas and chopped up one bunch fresh spinach. I roasted my eggplant 30 minutes in a 400 degree oven by first cubing it and sprinkling olive oil, minced garlic, salt and pepper on it and stirring it half way through. Then mixed the veggies together to be my veggie portion. I used home canned pumpkin and tomatoes in place of fresh and used no-boil noodles. I mixed my tomatoes in with the tomato sauce to make it spread easier. I also cut the feta down to 4 oz. It was the perfect portion. Note: If you want this dish to be truly vegetarian you need to find feta that does not have animal rennet in it which is the stomach lining.

Strawberry Shortbread Pie

To me the shortbread version of strawberry pie is the best. I wanted a sweeter glaze and used 1 cup sugar with 1 cup water with the 3 T. cornstarch and package of strawberry gelatin. I also kept my strawberries whole. I made a homemade crust of 1/2 cup ground shortbread cookies (ground in food processor) then added 1/4 cup sugar, 1/2 cup flour and 1 cold stick unsalted butter cubed. I pulsed this in my food processor and formed this in a pie dish. I baked it at 350 for 20 minutes. Let it cool before adding the strawberries and glaze. A wonderful way to enjoy fresh summer strawberries.

Cajun Chicken Pasta

This is very tasty. I replaced shallots for the green onions (a personal taste preference). If you want green onions I would only use the white portion during cooking and then use the greens as garnish at the end. Cooked green onion tops tend to be bitter and effect overall flavor. I also used used real garlic (one clove) pressed in place of powder and added it with the onions. I found the cajun flavor a little light so I added extra cajun after the cream to my desired taste. I also added double the amount of parmesan while it was still in the pan to help thicken the sauce.

German Apple Pudding Cake

This is the best apple dessert I have found. If you're tired of apple crisp or apple pie then definitely try this one. I used sweet apples so I reduced the sugar in the cake to 3/4 cup and omitted the raisins in the topping but kept them in the cake. Absolutely delicious!

Sesame Beef

Very flavorful and easy to make. I've made it twice, once only marinating 30 minutes and once doing it 20 hours (overnight). Definitely marinate overnight. The meat is much more tender and holds more flavor. I added some sesame oil and a pinch of red pepper flakes for additional flavor. I served this over Black Japonica (black and mahogany) rice which was the perfect accompaniment.

Pork Chops Stuffed with Smoked Gouda and Bacon

SUPERB! This was spectacular. I followed another recommendation of pan searing the chops. I deglazed the pan with a chardonnay and added some cream, and extra parsley, gouda and bacon with a sprinkle of salt. This sauce went wonderfully over the chops. As my husband says, "you can't go wrong with pork wrapped in pork".

Health Nut Blueberry Muffins

Very yummy! I added two teaspoons of flax seed to add to its health value. My 4 year old loved them. I will definitely be keeping this in my recipe box. Very easy to make and so worth having a healthy version of a breakfast favorite. Update: These freeze and reheat in the microwave very well. They don't keep as long as other muffins.

Bacon Ranch Pasta Salad

Great hearty flavor. Not a light salad. Tastes much better than Suddenly Salad. I used half the bacon and no olives. I added frozen peas with 3 minutes left in the boiling pasta. Will use fresh, uncooked peas when in season. I also used a whole wheat blend pasta for half of the rotini which added color and flavor. Definitely a keeper and what's great is there are no trans fats like in the boxed pasta mixes.

Banana Nut Oatmeal

Surprisingly good! This is a quick, healthy breakfast and even my 5 year old really liked it. I didn't have honey so I used some brown sugar. I will definitely do this again. The oatmeal was a little chewy so I'll add a little more milk next time.

Southern Pulled Pork

On its own I think the pork would be too bland, as other reviewers have said. Having lived in Nashville a few years and wanting a pulled pork slathered in sauce (as I am used to) I made a couple of changes that made this very appetizing and reminiscent of smokehouses. I kept everything in the preparation part of the recipe the same. I used vidalia onions. Instead of water I used 12 ounces of my favorite BBQ sauce and 12 ounces of a lager beer. I used the same amount of the liquid smoke. I started it in the slow cooker at breakfast time on high and four hours into it lowered it to low until dinner time. With one hour remaining I pulled the pork apart so the sauce could saturate all of the pieces. When it was finished I strained it and served it with a bottle of BBQ sauce on the side. Very delicious!

Tomato and Zucchini Melange

I chose this recipe because it reminded me of a dish my mom used to make when I was a child. I liked how it called for salsa which added some dimension to the dish. I also added some pressed garlic. I did not add water because I used a regular tomato which tends to be watery. Once it was plated I added shredded parmesan and crumbled feta. The feta did the trick. It was okay tasting until that was added.
