Sesame Beef

Reviewed: Jul. 30, 2006
Very flavorful and easy to make. I've made it twice, once only marinating 30 minutes and once doing it 20 hours (overnight). Definitely marinate overnight. The meat is much more tender and holds more flavor. I added some sesame oil and a pinch of red pepper flakes for additional flavor. I served this over Black Japonica (black and mahogany) rice which was the perfect accompaniment.

German Apple Pudding Cake

Reviewed: Nov. 13, 2007
This is the best apple dessert I have found. If you're tired of apple crisp or apple pie then definitely try this one. I used sweet apples so I reduced the sugar in the cake to 3/4 cup and omitted the raisins in the topping but kept them in the cake. Absolutely delicious!

Cheddar Cabbage Casserole

Reviewed: Nov. 17, 2007
I am usually not a fan of cooked cabbage recipes. I tried this one with the recommendation of adding cooked breakfast sausage (1/2 lb.) and garlic powder and it turned out great. My 3 year old enjoyed it as well. I would cook this again.

Sausage Egg Casserole

Reviewed: Nov. 22, 2007
This is a great make ahead breakfast casserole. I cut the recipe in half. If you do this make sure you use a large enough dish so it will cook within the 40 - 50 minutes. The first time I made it I used a smaller dish and it was too thick to cook through. This also reheats well for leftovers.

Chicken Fried Chicken

Reviewed: Feb. 26, 2008
Following the recommendations of reviewer Breeze (Feb 2006) for additional spices, it turned out wonderful. Chicken was very moist and flavorful. Simple to make. The family ate it all which means cook it again.

Italian Peas

Reviewed: Feb. 27, 2008
The best peas I've ever had. I followed the recommendation of using chicken bouillon dissolved in water in lieu of the broth. Very tasty!

Pork Chops and Sauerkraut

Reviewed: Feb. 27, 2008
Flavorful but next time I'll put them in a slow cooker so they'll be tender. A little tough, even with the juice of the sauerkraut.

Cajun Chicken Pasta

Reviewed: Mar. 3, 2008
This is very tasty. I replaced shallots for the green onions (a personal taste preference). If you want green onions I would only use the white portion during cooking and then use the greens as garnish at the end. Cooked green onion tops tend to be bitter and effect overall flavor. I also used used real garlic (one clove) pressed in place of powder and added it with the onions. I found the cajun flavor a little light so I added extra cajun after the cream to my desired taste. I also added double the amount of parmesan while it was still in the pan to help thicken the sauce.

Gooey Butter Cake III

Reviewed: Apr. 1, 2008
Delicious! Helpful tip: others complained about the difficulty of getting the dough into the pan - just mix it all in the pan and it spreads easily.

Coconut Macaroons III

Reviewed: Apr. 6, 2008
A little salty for my taste, will cut in half or omit it all together next time. I like my macaroons more sweet.

Health Nut Blueberry Muffins

Reviewed: May 30, 2008
Very yummy! I added two teaspoons of flax seed to add to its health value. My 4 year old loved them. I will definitely be keeping this in my recipe box. Very easy to make and so worth having a healthy version of a breakfast favorite. Update: These freeze and reheat in the microwave very well. They don't keep as long as other muffins.

Strawberry Shortbread Pie

Reviewed: Jun. 16, 2008
To me the shortbread version of strawberry pie is the best. I wanted a sweeter glaze and used 1 cup sugar with 1 cup water with the 3 T. cornstarch and package of strawberry gelatin. I also kept my strawberries whole. I made a homemade crust of 1/2 cup ground shortbread cookies (ground in food processor) then added 1/4 cup sugar, 1/2 cup flour and 1 cold stick unsalted butter cubed. I pulsed this in my food processor and formed this in a pie dish. I baked it at 350 for 20 minutes. Let it cool before adding the strawberries and glaze. A wonderful way to enjoy fresh summer strawberries.

Bacon Ranch Pasta Salad

Reviewed: Jun. 18, 2008
Great hearty flavor. Not a light salad. Tastes much better than Suddenly Salad. I used half the bacon and no olives. I added frozen peas with 3 minutes left in the boiling pasta. Will use fresh, uncooked peas when in season. I also used a whole wheat blend pasta for half of the rotini which added color and flavor. Definitely a keeper and what's great is there are no trans fats like in the boxed pasta mixes.

Cream of Cauliflower Soup I

Reviewed: Jul. 7, 2008
I would rate this soup a 3.5. It seemed to be lacking some flavor. I needed to add a bunch of salt and some extra sharp cheddar to add flavor. I think next time I will use salted butter, add some garlic and crushed red pepper with the onions. I will also caramelize the onions for added depth. I'm not sure how this will mix with the thyme and tarragon but it seems to be lacking a bolder flavor. If these modifications don't work I will try some fresh basil. And definitely puree all of the soup, otherwise the whole vegetables are left lacking for flavor. This is a great start to a potentially superb soup. Oh, and definitely cut down on the liquid. I cut the broth down to 4 cups and didn't steam the cauliflower ahead of time but let it soften in the broth to keep the flavor in the soup base and not left in a steamer. I also used all cream hoping this would bolden the flavor.

Southern Pulled Pork

Reviewed: Jul. 7, 2008
On its own I think the pork would be too bland, as other reviewers have said. Having lived in Nashville a few years and wanting a pulled pork slathered in sauce (as I am used to) I made a couple of changes that made this very appetizing and reminiscent of smokehouses. I kept everything in the preparation part of the recipe the same. I used vidalia onions. Instead of water I used 12 ounces of my favorite BBQ sauce and 12 ounces of a lager beer. I used the same amount of the liquid smoke. I started it in the slow cooker at breakfast time on high and four hours into it lowered it to low until dinner time. With one hour remaining I pulled the pork apart so the sauce could saturate all of the pieces. When it was finished I strained it and served it with a bottle of BBQ sauce on the side. Very delicious!

Herbed Batter Rolls

Reviewed: Jul. 7, 2008
Surprisingly good. I'm used to garlic herbed rolls and these were on the sweeter, lighter side. A nice change from the typical herbed roll. Be prepared for very gooey batter but they rose well and baked sooner than the time allotted for. I only needed to spray cooking oil (Pam) in the muffin pan and they didn't stick at all. Everyone loved it and they were very quick. I love how it didn't require kneading and only used one bowl.

Tomato and Zucchini Melange

Reviewed: Jul. 7, 2008
I chose this recipe because it reminded me of a dish my mom used to make when I was a child. I liked how it called for salsa which added some dimension to the dish. I also added some pressed garlic. I did not add water because I used a regular tomato which tends to be watery. Once it was plated I added shredded parmesan and crumbled feta. The feta did the trick. It was okay tasting until that was added.

Baked Chicken on Rice

Reviewed: Aug. 13, 2008
Just didn't like the flavor. I think onion soup mix goes better with beef. It seems people either really like this or despise it. It was worth a try but I won't make it again - it was purely a flavor thing for me.

Slow-Cooker Pepper Steak

Reviewed: Sep. 30, 2008
This had an okay flavor. It tasted more like beef stew and less like a pepper steak. I was hoping it would have more of a Chinese flavor but it didn't.
