Quinoa and Black Beans

I used can corn and 1 can of kidney beans, left out cilantro because I didn't have any. This came out great, and my picky vegetarian son LOVED it! I had him eat it as a salad with a little salsa and shredded cheese in his school lunch. It is a mild dish with mellow flavors that would be good with something spicy.

Homemade Black Bean Veggie Burgers

did not have bell peppers, so improvised. Used a palmful of walnuts, a shitake mushroom and a 1/2 carrot. the mix tasted good before I added the egg. This is so adaptable, great recipe for vegetarians. Thanks.

Addictive Sweet Potato Burritos

Unique, vegetarian and simple. Made mine with homemade black beans, they were seasoned already, so I cut down a little, adding about 2/3 to taste. Great.

Red Salad

I've been looking for this recipe for so long! I tried it as a kid at a friends house. And, yes I was just being polite and trying it, but boy was I surprised that beets could be that good. I never liked them before. Thanks for sharing!

Sweet Potato Cranberry Bake

Perfect! I used the crockpot for 8 hrs on low. It freed up the stove and cooktop. I didn't measure a thing, but just kept layering until the crock was 3/4 full, then added the topping. With nothing precooked, it was almost too easy. I did add more butter than indicated, and added a little brandy, and switched up pecans for the walnuts. Using the crockpot, I would say this recipe is nearly fool-proof.

Lamb Chops with Balsamic Reduction

Sweet Corn Tomalito

very good. I used polenta instead of the cornmeal because I was out of it, and sour cream for the milk. Everyone loved it. You don't need much because it is sweet and tasty. I used the microwave version, but I would like to try it in a rice cooker.

Refried Beans Without the Refry

I just made this and followed the others reviewers suggestions about it being bland, so I pureed the garlic, 1/2 onion and serrano pepper and added it to the pot. I doubled the cumin and added chicken boullion cubes 3, to the pot and no salt. Well it was still salty, and spicy. I have started the second batch according to the recipe without salt, and 2 boullion cubes, no puree of onion or pepper. I'll see if this can tone it down a bit. I used one less cup of water since the first batch was soupy. I do think it does miss the fat, but if cheese is added, that should help out.

Harvest Loaf Cake

This is one of my favorite holiday breads, my mom would make it every year and I would gobble it up. We always wait until the next day to cut it- so it would set. The other thing we do is lighten up the glaze by using milk instead. That way the glaze would not be sticky, and we can wrap it up for gift giving.

Basil Shrimp

Really good. I didn't have the brown mustard, so used regular yellow. I bought the shrimp on skewers already to go. I also mixed it in the magic bullet. I had alot left over so I dipped petrale sole fillets into the mix, and then in seasoned panko breadcrumbs and cooked on the grill. Yum, that was good. I still had more of the mix left so I covered broccolini with it and threw the bread crumbs on top, and cooked it in the microwave. What a simple and tasty dinner. Thanks for the recipe
