Indian Eggplant - Bhurtha

There are a lot of supposed eggplant haters in my house, so when I made this, I didn't let anyone know what was in it until they tried it. Everyone loved it and all said "can't even taste the eggplant". I made some small changes, I grilled the eggplant (to avoid putting the oven on), added a jalapeno pepper that I had on hand (and we like a lot of heat) and a pinch of garam masala (it just needed a little something more at the end). I served it over some basmati rice with raita sauce. I will definitely be making this again.

Pork Tenderloin with Raspberry Sauce

This recipe was great, I have made it several time for company always to rave reviews. I changed two things. 1)instead of using chops I used whole pork tenderloin(s), seared them as called for in the recipie, then finished cooking in the oven. While the tenderloin was resting I made the berry sauce. Slice the tenderloin on a bias, and drizzle the sauce over it makes a beautiful presentation. 2) I have used all different kind of berry jams, whatever I have had on hand, always seedless though. Blackberry, raspberry, blueberry, even some boysenberry that was part of a giftbasket I got.

Italian Green Bean Chicken

This is a great recipe, nice and light and awesome way to get some extra veggies in. I followed pretty close except I didn't cook my chicken all the way through at first, I browned it then let it simmer in the tomatoes to finish cooking. I also added onions and more garlic and added a couple pinches of crushed red pepper to add a touch of heat. Served over pasta with a bit of parm or feta cheese was a great meal.

Ghirardelli® Individual Chocolate Lava Cakes

Made this as New Year's Eve desert. I liked that I could put it together early then pop it in the oven when we were ready for it. Steps were easy to follow and presentation was beautiful. The only issue I ran into was the lava wasn't very lava-like. It didn't flow as I expected. But I think this was my fault as I baked them a little longer than called for. Despite the thick lava, the taste was amazing, everyone asked for more... too bad they were single servings :)

Cinnamon Raisin Bread I

This is a great recipe. The soft dough was great to work with, the end result was great texture and not to dense. I did break the dough up into 3 pieces to make the loaves instead of doing it all as one. And the loaves were a bit large and really puffed out of the pans. Next time I will probably make 4 smaller loaves.

Witches' Brew

I can only review the hand portion since I didn't use the punch recipe. The hand came out great though. Used the recipie as written. It froze fine, I sliced the glove up the side and then each finger as it was coming off. We served it in a red wine sangria, very spooky! Even as it started to thaw the gelatin kept the hand together, and actually made it kind of move funky when people dipped in for more punch. It was a huge hit at the Halloween party.

Zucchini Slice

This was a great starter recipe for me, I really liked the premise of it, but made some significant changes, well additions really. I added bacon as others suggested, caramelized onions and garlic, salt & pepper, red pepper flakes. Also, for cheese I used a few different kinds, essentially using up a bunch of 'ends' I had in the fridge. It was a great way to use up extra zucchini and other leftovers in the fridge.

Fresh Broccoli Salad

This was pretty good, but I found there was way too much of the dressing, so I used it as a coleslaw dressing as well. I liked it on the coleslaw even better than the broccoli. I also added some salt, pepper, garlic powder and in the coleslaw some mustard poweder and poppy seeds.

Blue Bacon Stuffed Mushrooms

I made these for my New Year’s Eve party and they were a big hit. They are rich and tasty and very easy to make. I made a few small changes 1) I had precooked bacon on hand, so I used that. In place of the bacon fat, I cooked the onions and mushroom stems in olive oil and butter. 2) I used panko instead of regular breadcrumbs. 3) I don’t have a blender, so I just chopped things very fine, and mixed everything together. Finally, I made the filling the day before, then stuffed the mushrooms early the day of the party and refrigerated until I baked them later in the evening. This seemed to work out just fine, and made prep for the party much easier.

Stir-Fry Pork with Ginger

I really enjoyed this pork recipe it was terrific over brown rice. I made it with mirin (Japanese sweetened rice wine) in place of the Chinese rice wine listed because it's what I had on hand. I also added fresh sugar snap peas right before serving. If you love ginger like I do, you will enjoy this meal.

Cinnamon and Lime Chicken Fajitas

This recipe was excellent; I have made it several times. I love the flavor of the cinnamon and lime together. I did replace the baking potatoes with sweet potatoes I think this added some additional flavor, and sweet potatoes are so good for you. In addition, one time I did not have the jalapeno, so I replaced it with some canned chipotles in adobo sauce. This added some additional heat and a lot of smoky flavor. This is now my preferred way of making the recipe.

Oatmeal Raisin Cookies VIII

I have tried a number of *sugar free* cookie recipes, and this by far is the best. I followed the recipe as is, but after the first batch came out of the oven, decided to flatten out the dough before baking, this made them more cookie than cake looking. Next time I will add another tablespoon or two of fructose, but other than that wouldn't change a thing.
