Easiest Egg Nog

Easy and delicious! I added ice because I like a very cold egg nog. This also thins it out a bit- which I prefer.

Roasted Vegetables

Oh. My. Goodness! This was so incredibly good! I cubed everything really small, and i used a little less sweet potato (not really a fan, but in this recipe, I loved it!) I used 2 sweet potatoes, and 2 red peppers and 1 onion per 3lbs of red potatoes. I also omitted the squash. (It wasn't in season.) To me, it was delish. :) I served it for company with crunchy-coated honey ham, a couple other sides. The potatoes were gone first!

Tres Leches Cake

I have searched for the perfect tres leches recipe, and I can now end my search! This recipe hit it right on. Some tips I would offer to 'first-timers' is: When you fold in the egg whites, be very careful not to over-mix them in. If you must choose, under-mix them in, but overt mixing will result in flat-custard like cake-yuck! Secondly, This cake tastes better if you let it sit for a day or two in the fridge (the perfect make ahead dessert!) Only don't frost it until the day you serve it. The receipe said to trow out the remaining milk, but I like mine extra moist, so I saved it and added it on serving day, and the cake soaked it right up. Lastly, whip up the remaining cream with about 1/4 c sugar and 1 tsp vanilla for the frosting. Yum! Recipe says garnish with cherries, but I prefer lots and lots of fresh fruit and berries. Enjoy!

Tart and Bubbly Wedding Punch

Perfect! I'm not a big fan of the super-sweet sugar punches, but this punch was excellent - not too sweet- just wonderful and refreshing. Loved it! Garnish with cranberries (and/or lemons, limes, oranges, pineapple) to make it festive. I had many many requests for the recipe.

Chiles Rellenos (Stuffed Peppers)

This recipe was ok. when you roast the peppers, make sure you roast every inch, and expect it to take a long time. (I learned that the hard way.) Also, you definitely need some type of sauce to go with it, or else it is way too dry. the meat mixure is good, but a little heavy. Next time, I would definitely half the meat mixture and add more cheese. Overall it is a good recipe.

Mexican Rice II

sooo good! love it! I made this rice and served it with"refried beans without the refry" -another recipe on this website. They were both perfect together a good tip someone gave me is to let the rice brown until it looks like the golden color of your ring (if you have a yellow gold ring) that helped alot when making this. I think with previous attempts making Spanish rice, I didn't let it brown enough. This time, it was perfect!

Lola's Horchata

YUM YUM YUM i love horchata! This is a great basic recipe. A few things you can do to add more flavor is add the cinnamon earilier and also blend some almonds or other nuts with the rice and let them soak too.

Refried Beans Without the Refry

This is GREAT! So easy and so YUM! I do agree with a previous review writter though. 5 tsps salt is waaaaaaay too much. I used half that and it was more than enough. Also, maybe my crock pot is hotter than others, but I cooked this on high 3 hours and low 4 and it was done. Didn't need the whole 8 on high (i think it would have burnt if i did that.) Overall---awesome recipe! definitely a keeper. Freeze the extras for later. Yum!

Bird Seed Squares

Love it, Love it, Love it!!!! This recipe is easy and fast to make, healthy, and it tastes great! I love the fact that you can use whatever you have in the kitchen and it still turns out yummy. I've made this twice -once with coconut, once without. Both times it was good, although i did like it with the coconut better. I used chunky pb, didn't have sesame seeds, so i added slivered almonds and flax seeds instead. Came out delicious. One thing I did notice is that it doesn't taste so great right after you make it. Wait a day or so, and it's perfect! Next time, I'm going to add even more coconut, and I'll add some marshmellows too. (not very healty, I know, but still good.) Happy non-baking!

Tres Leches III

I have had tres leches before and I absolutely love it, but this recipe didn't seem to give the right directions. I thought that i was doing what the recipe said to do, but it ended up comming out very heavy- almolt like a custard. That is not how tres leches is supposed to taste. For all the work it required, it seemed like a waste.
