Quick Peanut Butter Cookies

My first gluten free cookies and they were awesome....easy, quick, light and tasty. I used natural crunchy peanut butter draining off most of the oil. This recipe is definitely a keeper!!

Apple Spice Cake

I don't make cakes very often but wanted to gift a neighbour who is ill. This cake is moist and flavourful and makes a great gift. It lifted my neighbour's spirits just with the aroma of it when I walked in with it straight from the oven. This recipe is a definite keeper!

Fennel Soda Bread

This is simple, quick and one of the best textures I have seen. I substituted half whole wheat flour and added some crushed flax seeds for extra nourishment. Truly a keeper!

Rich and Creamy Beef Stroganoff

This was a fabulous Sunday dinner for 4 and the best stroganoff I have made in some time. I followed the recipe to the letter although did use some extra flour to thicken the sauce. I served it over egg noodles that had been buttered with poppy seeds, a hearty green salad and multigrain bread with oil and balsamic dipping sauce.

Pizza Alfredo with Roasted Vegetables

This was an awesome pizza with a different flavour. I cut the meatballs into slices and used sliced brie instead of Asiago sprinkled with a little shredded cheddar. Favourable comments from everyone for this hearty pizza.

Very Simple Spelt Bread

This is a great bread recipe and is wonderful fresh or toasted. I added flax, pumpkin and sunflower seeds and it made a wonderful dense and nutritious bread. Perfect for sandwiches!

Banana Bran Muffins

I added a handful of dried cranberries and sunflower seeds and substituted half and half for the orange juice out of necessity. They were more than well received at a brunch.

Green Bean Blue Cheese Salad

Great recipe....I added the blue cheese while the beans were still warm so it melted. I added some finely chopped portobello mushrooms that had been soaked in balsamic vinegar and chopped some dulce to add minerals and salt flavour. Agreed one tbsp of olive oil is enough.

Lazy Perogies

This is a great way to have an entire perogie casserole....great taste with all the flavours of perogies and easy to warm up as leftovers. I added a layer of steamed finely-chopped cabbage. I substituted ricotta for the cottage cheese and omitted the onion salt. This would be a great pot luck contribution....lots of flavour but fussy to make.

Sweet and Crunchy Salad

This recipe makes a great quantity. I get asked for the recipe often. I used one package of ramen noodles and added 1 cup bean sprouts, 1/2 cup chopped fresh snow peas, 2 tbsps. cilantro and 1 tsp. ginger. I substituted peanuts for cashews.

Chicken and Shrimp Jambalaya

This has to be the best Jambalaya recipe that I have come across! It would be a great pot luck dish since it makes such a quantity. This makes a flavorful, hearty dinner! Very, very good! Thanks for sharing this one!

Steaks With Roquefort Sauce

This is a lovely sauce with a gentle taste of rocquefort. I added a few peppercorns to the sauce and it was zippy! Goes very well with mashed potatoes and horseradish.
