Pecan Pie Muffins

Had these the other day at a luncheon. They were absolutely wonderful. They are like mini pecan pies. A crispy texture on the outside and slightly gooey in the middle just like a pecan pie. Will have to make these myself this holiday season. Thank you for sharing your recipe. A must try...

Potato Candy

perfect for making with children just starting to cook. In looking at others potato candy these may be good if you made individual balls flattend out and put some peanutbutter in center and roll the dough around PB and made into a ball then dipped into chocolate then cooled. I do like these just the way they are and always looking for new a different ways to give a different kind of treat.

Unbelievable Cheese Cake

Wow I have made several versions of this cheese cake and getting more and more inventive. Just by adding different things to the batter: Crush the soft peppermint candies and fold into batter for peppermint cheese cake. when making the 2 box recipe remove 1/4 of the graham cracker mixture and add apple pie filling on top of the the cheese cake mixture after the filling is set and sprinkle the remaining crumb mixture for a Apple Pie Cheese Cake. ANd the best one I have done is the cookies and cream cheese cake. for the double box recipe instead of using the graham cracker crust take 1 package of oreo cookies and crush them in the bottom of a 9x13 pan. Make the batter and crush another package of oreos and fold into batter then pour into pan and let set over night. So heavenly. I am thinking my next will be a german chocolate cheese cake made with brownies in the bottom of 9x13 pan add in the filling and spread the coconut icing over top. Maybe some alterations not sure but sounds yummy.

Waldorf Salad I

I wanted to try something healthier with this recipe so I did make a few changes. I omitted the salad dressing/mayo and took a large container of whipped cream and added in warmed up package of cream cheese. I also doubled the recipe used granny smith apples and stirred in a bag of mini marshmallows. I also used a bag of glazed walnuts because they were less expensive. I made it for a ladies fellowship. Was loved by all. and they even took the leftovers home.

Powdered Sugar Sugar Cookies

Recipe gotten from a bag of powdered sugar. Made them for my Mom and she was hooked. Made them with mini bear cutters so she could eat them on the way home and they were gone in 6 hours. They are soft and sweet.

Fruit Pizza

Making individual Fruit pizza's for a Ladies retreat with the spread and glaze. Plan on using soft sugar cookies from the store and top with Slice of Kiwi, Strawberry & a few blueberries. Can't wait to try this out! Looks yummy. Out of all the recipes I have looked at this one seemed the easiest and most appealing. Will rate it fully after the retreat. Thanks for the recipe. These turned out awesome. I made 75 individual pizzas. I used the hard sugar cookies from a package and made them up just before leaving for the retreat. When we had dinner (3 hours later) all of them were soft and perfect to eat. They would probably have a great flavor with Gingersnap cookied since they are usually hard after baked. Thank you so much for the great recipe...

Fruit-Topped Buttermilk Pancakes

This was agood recipe. I only made the pancakes and they turned out great. The bater was not too thick or thin. I did let the batter sit about 10 minutes while I finished getting ready for the day. I used a pancake baker and they did not burn. they were fluffy and the flavor was nice and smooth. These stayed with us longer than other recipes or box mixes do. I doubled the recipe and it made 16 8 inch pancakes. They don't have the bitter taste that other recipes have and the don't fall apart either. I asked my DH and he said they were good. Our boys went for seconds. Thanks for the recipe I will make this again over and over.

Waffles II

These were ok. They were doughy in the center and not sweet. After tasting the first one I added in a small amount of sugar and they still lacked a sweet flavor. Was hoping to find a recipe that had few ingredients and flavorful without the syrup.

Apple Dumpling Cake

This was really good Amy. Does not have an overly sweet taste. I used motts apples. I would use Granny Smith or Red Delicious next time. (we did not care for the motts apples too soft and we needed to use them up). A good firm apple is best for this recipe. Was very good and definitely a keeper. Thanks Amy for the quick and easy recipe. Oh MY I am keeping my previous post in here but I had to say that Amy I had cut too many apples and had to mix up a 2nd batch. Everyone really loved the first one. But my youngest devoured the second one. He started picking at it bit by bit till nothing was left. This was in a 9/13 pan and he had it gone in a day.
