Tangy Cauliflower Salad

I didn't have walnuts so I used pine nuts that I toasted instead. Also, I used fat free mayo which worked fine. I took this dish to a picnic and it was a hit. Everyone really enjoyed the unusual combination.

Apple Rosemary Pork Tenderloin

We enjoyed this recipe however I would make a few suggestions. First, my cooking time was about 1.5 hours (instead of 2) and my apples & onions didn't cook all the way so I would suggest adding the apples after 30 minutes and let them cook until the tenderloin reaches 160 degrees. Also, definitely use a meat thermometer if you have one. After I completed the gravy, I added the apples and onions to it and let them cook a bit together then I served them together in a bowl with the sliced tenderloin on the side. One last tip, I tied 2 tenderloins together and cooked them as one. It's the first time I've done this and it worked well.

Deep Dish Layered Salad

This salad is a great side dish. I made the salad on a Sunday and I did not put the dressing on the salad. The salad stayed fresh and since I didn't dress it, we were able to have it as a side through out the week. The dressing is definitely a highlight of the recipe. I used imitation bacon bits to save time as others have suggested.

Baked French Fries I

These baked fries are good. I followed the advice of others and cooked at 425 degrees and turned them after 15 minutes. My were done in a total of 30 minutes. I used a ziplock baggie and put the spices in with the oil and then I dumped the raw potatoes in to evenly coat. I doubled the spices, but the chili powder was overwhelming so I won't do that again.

Grandma's Slow Cooker Vegetarian Chili

I made this chili for a group of friends this weekend. This chili is excellent as is, however my grocery store did not have black bean soup so I used canned black beans and doubled the chopped tomatoes. Half the group was not vegetarian so I decided to do a "layered" approach. Along side the chili I offerred chili-style ground beef so that it could easily be added to the chili. It was a huge hit and everyone seemed happy. I'll definitely make this meal again.
