Waffles I

Ran out of waffle mix, so decided to make these from scratch. Reduced veggie oil to 1 tbs. and they tasted yummy, but a probably not as fluffy as the original recipe, which was fine with me. Saved on fat and we enjoyed them.

Downeast Maine Pumpkin Bread

Delicious! I swapped out the white sugar for brown and added some chocolate chips and my kids were clamoring for more! I'm about to bake off a few more loaves today. Will try substituting half of the oil for apple sauce, and reducing the sugar down to 2 cups.

Cinnamon Ice Cream

Yummy! I used egg substitute in place of the eggs, fat free half and half instead of the regular half & half, and finally I reduced the sugar to 3/4 cup and the result was still very creamy and flavorful. The true test will be tomorrow when my kids will get to taste it!

Snickerdoodles I

Yum! My 5 year old daughter and I made these tonight for a school bake sale. I mixed all of the ingredients in my mix master, then rolled the dough into balls (which was quite easy, not sticky or messy) and my daughter rolled the balls in the cinnamon/sugar mix. I have the last pan in the oven and my daughter already snatched 5 cookies off of the cooling rack - sheesh I might have to whip up another batch to have enough for the bake sale tomorrow! I had never even heard of Snickerdoodles before, but the recipe seemed simple enough and the cookies are quite tasty, even for my daughter who usually turns her nose up at anything that doesn't have "chocolate" as an ingredient.

Creamy Dill Cucumber Toasties

This is really simple to make, yet delicious! I used Knorr Creamy Dill Mix instead of the Italian Dressing Mix and added the cream cheese/mayo called for in the recipe as posted (I didn't follow the recipe on the back of the Knorr packet). Just so happens the Knorr mix was on sale so I thought I'd try it. I found heart shaped lavosh crackers at the supermarket. They made my hors d'oeuvres look especially elegant and they tasted great.

Golden Sweet Cornbread

Very simple recipe. I usually use boxed cornbread mixes and tried this because I didn't have any mix on hand. I think I'll stick to scratch from now on!

Jamie's Cranberry Spinach Salad

I brought this to a Labor Day Weekend BBQ and everybody (about 12 people) raved about the salad. Not one leaf of spinach was left in the bowl! I did make some adjustments to the recipe: Added about a tablespoon of worchestershire sauce for an added kick and toasted the sesame seeds before adding them to the dressing for a nuttier flavor. Didn't have poppy seeds on hand, so I left them out. Finally, I used fresh sliced strawberries instead of the cranberries (mostly because they were in season and very inexpensive). The dressing was delicious, but I was careful to add it to taste. Even though we served this salad to 12 people, we had quite a bit of leftover dressing which I plan on using again tonight. I will definitely make this recipe again and will try it with the dried cranberries when strawberries aren't in season. Very tasty and a great change from a standard green or spinach salad. Yum!

Caramelized Baked Chicken

Very good! I cut this recipe in half and made it with drumsticks that I found on sale. The sauce did carmelize and I basted several times throughout cooking. Delicious over brown rice!

Applesauce Oatmeal Cookies

I was trying to find a healthier cookie recipe for my 17 month old daughter and this one was a winner! She gobbled down two cookies right away and she's very particular about her food. This recipe was also a hit with my husband. Definitely a keeper in our household. Next time, I think I'll add raisins.

Honey Of An Oatmeal Bread

Really tasty . . . I think I'll skip buying sandwich bread at the supermarket from now on and make this instead. After reading the other reviews, I also added a bit more flour, oats and yeast and I baked the loaf in my oven at 350 for about 40 minutes. Delicious!

Cheese Herb Bread
