Basic Cream Cheese Frosting

This beats the pants off canned cream cheese frosting! Easy to make and just what I was looking for frosting a spice cake. I only needed about half of the amount it makes to frost the top of a 13x9-inch cake. Hmmmm, guess I'll need to bake something else to use up the remaining frosting :)

Favorite Old Fashioned Gingerbread

Doubled the spices as recommended by other reviewers and it made a dark, spicy, moist gingerbread that tasted even better the day after I baked it. Served with fresh whipped cream. We loved it!

Cinnamon Roasted Sweet Potatoes

Excellent! Everyone at the Thanksgiving table who ate them loved them. I tossed the potatoes with enough oil to coat them lightly then roasted them at 400 F for 20 minutes. Tossed again with brown sugar mixture and continued roasting another 10 minutes until done. I did not need to drain the potatoes because they weren't greasy. Squeezed the fresh lime on top to finish. Nice touch.

Oatmeal Raisin Cookies VII

These were delicious and my daughter asked me to make them again. They were still chewy and good two days after I baked them. Mine took about 16-18 minutes to bake.

Hummus III

Just like grandma used to make! I needed to add water to get the proper consistency. Don't skimp...use good quality tahini and fresh lemon juice. Thanks for sharing!

No Bake Chocolate Oat Bars

Rich and delicious treat. One of the kids said it reminded them of chocolate no-bake drop cookies and I agree, but these are even richer because of the chocolate chips instead of cocoa powder. Also, I used regular rolled oats, not quick-cooking.

Creamiest Rice Pudding

Good stuff! I made mine in my Le Creuset french oven(enameled cast iron pot) and there was no problem with sticking or burning. It took an hour after I brought it to a simmer to bring it to the proper consistency. Made mine with 4 eggs per other reviewers' suggestion and it was perfect. Used jasmine rice and 1/2% milk. Served slightly warm and will add a little whipped cream on top next time.

Banana Cake II

Everyone wanted seconds when I served this cake. I refrigerated the cake overnight and the next day the texture had toughened up a bit. I would recommend enjoying it at room temp the first day.

Soft Sugar Cookies IV

Better than the best sugar cookie recipe I had before this one! Ridiculously delicious. I helped myself to a couple as they cooled off and it was all I could do not to eat a plateful of them. Did not alter ingredients, only changed the serving size to 36 (original recipe yield was 24) which made the butter/shortening measurements a nice easy-to-measure 1 cup each amount and gave me 6-7 dozen cookies. Don't worry, I have 3 kids and a hubby who will make short work of these.

Sausage Barley Soup

This soup was enjoyed by everyone in the family and that is rare! Doubled the recipe and it was enough to feed five of us for two meals. I added a little more carrot and more barley. I used quick-cook barley, cooked it separately and added it right before serving.

Slow Cooker Salisbury Steak

Good home-cookin' recipe. Nice beefy flavor. Used low-sodium cream of chicken soup to reduce salty flavor. Still pretty salty but no one complained.

Orange Dream Punch

Tastes just like an orange creamsicle! I used orange sherbet/vanilla ice cream. Kids and adults loved it. No leftovers. Make sure the orange juice and sherbet/ice cream is well softened before adding gingerale so it does not clump up too much.

Cheese Soup with Broccoli

Very good soup. My adjustments: double the broccoli and carrots; minced garlic added to onion-butter mix. I used mostly low-sodium broth (about 2 cups) and will use only low sodium broth next time. The process cheese was plenty salty for my taste and I wish I had not seasoned it with salt. Overall it was quite good and my husband ate about 4 bowls of it!

Slow-Cooker Pepper Steak

Family really liked this. I used fresh garlic and added green peppers an hour before serving (cooked on low setting). The sauce is fairly thin and works well with rice. I would thicken it up with additional cornstarch to serve with mashed potatoes.

Chocolate Chip Pancakes

Made these for a giggling group of 10 year old girls after a sleepover and they were so excited to eat choco-chip pancakes. The basic batter is good with or without the chips. Nice and fluffy and light. Since some people wanted plain cakes, I added the chips onto each one after pouring out onto the griddle. Worked great.
