About this Cook
My parents, sister & brother politely ate my first master creation at 15...spinach lasagne. Eeeew, it needed help! Things have improved greatly since then and cooking has been a lifelong passion. The kitchen is my favorite place to hang out.

My cooking triumphs
I have rarely let the lack of proper tools get in the way of preparing something I really want to make. Being creative I have done things like use an empty wine bottle as a rolling pin before I owned one! When I am excited to cook something I get innovative with missing tools and ingredients.
My cooking tragedies
Meat. I have a fairly limited repetoire but thankfully my husband loves to grill year round (even when he has to brush a foot of snow off the grill after he has shoveled a path to get to it!)

Basic Cream Cheese Frosting
This beats the pants off canned cream cheese frosting! Easy to make and just what I was looking for frosting a spice cake. I only needed about half of the amount it makes to frost the top of a 13x9-inch cake. Hmmmm, guess I'll need to bake something else to use up the remaining frosting :)

Favorite Old Fashioned Gingerbread
Doubled the spices as recommended by other reviewers and it made a dark, spicy, moist gingerbread that tasted even better the day after I baked it. Served with fresh whipped cream. We loved it!

Cinnamon Roasted Sweet Potatoes
Excellent! Everyone at the Thanksgiving table who ate them loved them. I tossed the potatoes with enough oil to coat them lightly then roasted them at 400 F for 20 minutes. Tossed again with brown sugar mixture and continued roasting another 10 minutes until done. I did not need to drain the potatoes because they weren't greasy. Squeezed the fresh lime on top to finish. Nice touch.
