Bean 'N' Beef Crescent Pie

Easy, tasty meal! My kids can be picky, but they thought this was good. Little changes I made: *used 8 oz cream cheese, *used a whole can of refried beans, *used taco sauce rather than seasoning (lower sodium)--all changes worked great.

Cinnamon Popcorn

This recipe was a lifesaver! I needed something quick & easy to make in bulk to give to neighbors for Christmas. My little addition to the recipe was to sprinkle chocolate chips over the pan of popcorn before popping it into the oven. Delicious!

Inside Out Ravioli II

I really liked this recipe, but only gave it 4 stars because I made some modifications. Being a last minute cook, I decided that baking the pasta wasn't going to work for me. Instead, I browned the meat and then added: onion, garlic, chopped fresh spinach, two 14 oz cans of tomato sauce, one 14 oz can of diced tomatoes, fat-free small curd cottage cheese, and a handful of shredded cheddar cheese. Once the pasta was cooked, I mixed it in and let it simmer for awhile instead of baking it. It turned out great.

Easy, Cheesy Zucchini Bake

I made this tonight with a few changes. I browned the ground turkey, added finely chopped fresh spinach, chopped zucchini, and frozen corn. Following another reviewer's suggestion, I added cumin & chili powder to season it. I skipped baking it in the oven & skipped the spaghetti sauce (totally forgot about adding it, but liked it without), but still added shredded cheese. The casserole was served over brown rice. My kids gave it two thumbs up, though my son picked around the zucchini. Next time I'll probably add some minced garlic to give it a little more flavor.

Scott Ure's Clams And Garlic

This was easy to prepare and tasted almost as good as a traditional white clam sauce. I only had two dozen clams on hand, but I added a can of baby clams (with juice) to make extra sauce to go with linguine. If I could give it 4.5 stars, I would.

Incredibly Cheesy Turkey Meatloaf

I'm not a huge fan of meatloaf, but loved this. Just a few changes: added a packet of reduced sodium onion soup mix (as others suggested), used shredded cheese, and added chopped spinach. The chopped spinach might sound odd, but it tasted great. My kids didn't even complain about the green stuff hiding in their meatloaf. Oh, and I didn't use ketchup...

Homemade Pancake Syrup

Easy, tasty recipe! I found this out of desperation when I discovered that we were out of syrup as I made pancakes. It tasted much better than store bought syrup. I did not have maple flavoring, but couldn't tell the difference. We will use this all the time. Thanks!

Butternut Pie Crust

I would give this 5 stars as a healthy alternative to traditional pie crust. I liked the flavor, but it comes out very tough & chewy -- hard to cut. But, I found that it gets better over time -- probably due to contact with the pie filling (in my case, pumpkin pie). I will definitely use it again, just don't recommend it if you want a flaky, easy to cut crust.

Spiced Butternut Squash Muffins

Although these muffins do have a good flavor, there is something wrong with the texture. No matter how long I baked them, they were "doughy," as other reviewers mentioned.

Apricot Carrot Bread

Very tasty and healthy. I used fresh apricots, and even pureed some instead of using applesauce. Like others suggested, I used half whole wheat flour. This recipe is easily adapted to whatever you have on hand. Thanks for sharing!

Butternut Squash Soup II

Nice starter recipe. I roasted the squash, added extra carrots, and omitted the potatoes, onion, and celery. Also, added fennel bulb and leeks (sauteed with carrots). After all was pureed, I added a can of evaporated skim milk, minced garlic, and tsp red curry. Absolutely delicious!

Banana Pumpkin Bread

Good recipe which can be easily adapted. I added extra pumpkin, cut the sugar in half, and used half whole wheat flour. I also cut the oil in half and added applesauce. Rather than adding walnuts to the batter, I sprinkled them on top along with a powdered sugar glaze. Very tasty!
