Meatball Sandwich

This was excellent. I wanted to make something different with ground beef because I was tired of hamburgers, tacos, etc. This was very easy and tasty! I used shredded italian blend instead of slived provolone and dried basil, oregano, and parsley istead of italian seasoning. Everything else I followed to a T.

Quick Chicken And Wine

YUM! This was so good! Even my boyfriend loved it and he is very picky. I did make some changes, though. I followed the advice of others and added some bread crumbs and seasoning (dried basil, oregano and salt). I didn't cut chicken into strips, just pounded it out some. I also coated the chicken in flour before dipping in egg and a bread crumb/parm mixture. I fried the chicken first in some veg. oil and then finished baking in a 350 oven for about 25/30 minutes. I made the wine sauce on the stove with two whole cloves in the wine and butter. I also added some flour to thicken the sauce. I used a little more wine too, Pinot Grigio, about 3/4 of a cup and I let it reduce with the garlic and butter. The result was awesome! Very cruchy coating and a great sauce. Served with white rice and corn on the cob!

Mom's Ginger Snaps

These didn't roll out well for me.I even chilled the dough for an hour before hand. The flavor was ok, although I did double the spices as recommended.

Chicken Enchiladas I

This was my first time making Enchiladas, and it was so good I almost couldn't believe I made it!! I used already cooked turkey meat instead of chicken (wanted to use some thanksgiving leftovers that were in the freezer) and it was wonderful. I omited the salt because I also made the Red Enchilada Sauce from this site, and I accidently made it a little too saltly. This really was a great dinner. I plan to make it many more times in the future. **Only changes I made was of course the turkey and instead of a whole onion(we aren't big onion people) I used a few shakes of some dried minced onion. I also thought the spices were perfect! Not bland at all as others have said.

Ricotta Cookies III

I made these to use up some ricotta from a small batch of lasange that I made (American Lasange from this site!) and was pleasantly surprised. I didn't know what to expect, but they are really good and easy to make. I made two kinds of glaze, one with lemon extract and another with strawberry extract. Both are good, but I prefer the lemon. My boyfriend even liked them. He was apprehensive about trying one, but said they were "pretty good." Even so, I think these are best served at a baby or bridal shower...something where women are the main guests. It's kind of a girlie cookie. :)

Mom's Macaroni and Cheese

I have mixed feelings about this one. It's ok. I didn't add the tomatoes. I think it has a heavy flour taste and not much of a cheese taste. I didnt have a sauce pan big enough to make the cheese mixture, and I didn't add as much milk as called for. I used about 3 cups. I really liked the consistency though. It was creamy, but just did't have enough cheese flavor. I will try this again with less flour, probably a cup and a half and add more cheese, probably some sharp cheddar.

Sweet Cinna-Ginger Spice Cookies

This is an ok cookie. I agree, it does have a slight flour taste, but it's not bad, and the blend of spices is nice. My dad is a diabetic, so I like to try new recipes with Splenda for him. This one is good, but I prefer the Splenda Oatmeal Raisin Cookies.

Libby's® Pumpkin Cranberry Bread

This is so good! I've never made anything like it and it came out perfect. I followed the advice of others and used 1/2 sugar, 1/2 splenda, and 1/2 oil and 1/2 unsweetened applesauce. I also used dried cranberrys, soaked in boiling water then drained. I also used the Pumpkin Pie Spice II (tripled recipe) as suggested by another reviewer. Will make again and again!

American Lasagna

This is a good lasanga. It was my first attempt at making it, and I was pretty impressed. My boyfriend really liked it as well. I do agree that it is slightly dry, but I don't like a sloppy lasanga, so I would only add slightly more sauce. My boyfriend said it was perfect, though. I used ground turkey, but followed everything else exact, except I used dried basil and fresh parsley because that is what I had on hand. I will make this again.

Spicy Chicken Breast Sandwich

This was very good, and very spicy! I toasted the bread and melted the cheese using the broiler and grilled the chicken, cut fajita style on the george forman grill. Will definetly make again!

Pesto Cheesy Chicken Rolls

This was a good, easy recipe (and my boyfriend loved it). I, too, made a breadcrumb topping. In a food processor I combined about 3 slices of whole wheat bread, 2 tablespoons of olive oil, a teaspoon of dried basil, and some salt and pepper. I brushed the rolled chicken with olive oil and patted on the breadcrumbs. I thought next time I would coat the chicken with dijion mustard (to add more flavor and cut some of the dryness from the breadcrumbs), but my boyfriend said he didn't think it needed it (I did though!).

Garlic Chicken Pizza

This was a great pizza! I made some changes, though. I was in a hurry, so I used a Boboli crust and I used broccoli, portobello mushrooms, red pepper, green onion, and sundried tomato as toppings. I grilled the chicken breast and seasoned it with garlic salt and pepper. I used Classico garlic alfredo sauce. A must try!

Crispy-Chewy Oatmeal Raisin Cookies

This is a great recipe. I have made it twice so far for my father, who is a diabetic. My 5 and 9 year old nieces even liked them...they ate most of them! I agree that 3 cups of oats is a little much, and I personally perfer more raisins. I added about 3/4 of a cup more than called for. Overall a great cookie!
